She attended NAU and after receiving her degree in Parks and Recreation Management, she took her first job in Iowa. “After my summer job ended in Iowa, I decided that I really didn’t want to spend a winter there,” Kanah said of deciding to move back to sunny Arizona. She met her husband, Todd, in Tempe and they were married 12 years ago after a whirlwind courtship. Now the parents of three children – Joshua (9), Jude (6) and Joy (17 months), Kanah is busier than ever as a stay-at-home mom. After living in South Phoenix, the Waltmans moved to Arcadia 4 years ago so that they could be closer to Christ Lutheran School where their children attend school. There is rarely a dull moment at the Waltman home. Each of the kids is very active and enjoy their own interests: Joshua is a budding artist, Jude loves to skateboard, and sweet baby Joy is a busy toddler – rarely leaving her mommy’s side! For the Waltmans, the weekends are all about family. Saturdays call for working on the yard, they enjoy being together as a family and family hikes are a must. I grew up with no mall, no movie theater – I learned to entertain myself and that’s something I want for my kids,” said Kanah. As a family that centers their activities around the home, Kanah makes dinner most nights of the week, and she rarely follows a recipe. In order to keep things interesting, Kanah has definitely found the knack when it comes to knocking off her family’s favorite restaurant meals. “I’m frugal! I got sick of going out for cheap hot dogs and burgers and spending $45 when I know I can totally make something just as delicious at home,” said Kanah. Kanah, who “mans” the grill at the Waltman home, has replicated delicious restaurant quality sliders with shredded cheese and added Worcestershire sauce as the secret. She also likes to keep meals fresh and always adds fruits and veggies to her meals when she can. “Berries are easy. My kids love fruit, and I always sweeten them just a bit with a little agave,” said Kanah. The frozen “hot” chocolate? With a small spoon, add the rest of the ricotta and mascarpone in small dollops. Season with salt and pepper. Fill a medium saucepot with water, add salt until it tastes like the ocean, and bring to a boil. Blanch asparagus for 30-40 seconds, shock in ice water. Slice Ciabatta, drizzle with half of the olive oil, season with salt. In a small sauté pan or griddle, toast both sides of Ciabatta. In another small sauté pan, heat olive oil and garlic, add asparagus and cook for a minute or until done. Heat a seasoned pan to med-low, add the butter. When butter is melted add the egg mix. Stir with a rubber spatula or wooden spoon until eggs are just cooked, NO COLOR on the eggs. The eggs will continue to cook outside of the pan so pull from heat a little runnier than desired. Place eggs on plate, garnish with asparagus, cracked black pepper, Ciabatta and prosciutto.
