Page 30 May 2 014 Continued on page 31 Historic hotspot revived with stylish menu make-over By Amanda Savage Old Town Scottsdale’s veteran restaurant Pink Pony underwent a major modernization this year, from the aesthetic, logo, menu and staff – the Pink Pony has managed to balance the new era of Arizona culinary, with the nostalgia of the Old West. “They (the owners) are looking for a fresh modern take on the Pink Pony,” said General Manager, Patrick Cawthorne, who came on board with the restaurant in November, “they don’t necessarily want to rewrite the history, but move forward in a new direction that still honors what the Pink Pony was in its heyday.” The restaurant was completely gutted, until all that remained were the beams holding the roof up and the concrete floors. Literally, every part of the restaurant is new. Guests are greeted with a large, open outdoor patio (that was not there before the change), which creates a welcoming airiness. The inside is dimly lit with a cozy/casual, but fashionable ambiance. By the design alone, it’s clear that bringing a youthful creativity to the restaurant, without forgetting where it came from, was a major goal in the redesign. Vaulted ceilings and the open kitchen provide guests with a view of the wood fire grill, enhancing the intimate, comfortable environment. Modern artwork and photos from Old Town in the 50s decorates the walls while clean, fine-edged cut wood, steel and stone used throughout the restaurant captures a modern edge. “I love the openness of it; I like that they decided to keep the old beams in the building, which keeps a bit of a rustic- ness to it, but it still has an open modern feel, ” says Cawthorne. The reinvented menu screams contemporary cowboy, with modern takes on classic comfort-food. “There’s incredible history here,” said Chef Fawcett in a press release, “old fans will be impressed with the changes and a Kale and Brussels Sprouts Salad

Start with the slow-roasted pork belly or pretzels with beer cheddar fondue. For a lighter bite try the Kale and Brussels Sprouts Salad, a delicate mix of kale, brussels sprouts, bacon, Manchego cheese and golden raisins, tossed in sherry-bacon vinaigrette. Crispy Chicken Thighs with fingerling potatoes and country gravy, and the Hand-Rolled Spinach and Kale Ravioli with almonds, roasted red peppers ricotta, white wine and butter highlight the supper options, while sides range from things like Green Chile-Cheddar Grits, Cheese ‘N Mac and Garlic Mashed Potatoes. Along with the other changes, Pink Pony has experienced a cocktail revolution. They’ve adapted hand-crafted and boutique liquor practices, making it a contender in the growing local cocktail scene. The drink menu is complete with infused liquors, mules, house cocktails, draft beer and an extensive wine and champagne list. While their cocktail menu offers a lot of tequila, rum and vodka based options there are gin and bourbon options too.
