In 1999, Zias found himself enrolled in the Scottsdale Culinary Institute. After graduation he left for New York where he did an internship and began cooking in restaurants. While there, he discovered another passion, not far from his kitchen. Korin, a Manhattan shop home to the most extensive collection of Japanese chef knives in the world, became one of Zias’ favorite spots to explore. He began watching Chiharu Sugai, the master knife sharpener at Korin, and knew his life would eventually go in a different direction. Soon Zias was back in Phoenix cooking at Fiamma in the James Hotel (now The Saguaro). But in 2007, he decided to make that change in direction. “I originally opened my 300-square- foot knife shop on Indian School and Goldwater, as an industry store,” Zias said. The shop got attention. “After the original store, we moved to a larger spot on Miller and McDowell and now with our new home in Arcadia (4837 E, Indian School) we have space for everything,” Zias said. “We have partnered with woodworkers who make unique cutting boards and knife blocks. We have wine keys. We have chef coats and shoes.” And, Phoenix Knife House has gone from being a place for the industry, to a place for everyone. “We now do business with chefs, culinary students and home cooks. We sharpen knives for home cooks at about $3 per knife.” Zias, along with Corey Dunlap, a Knife House employee and also an ex-chef, use their love and knowledge of the business not only to sharpen knives, but to educate. Monthly sharpening classes are held the fi rst Sunday of every month. For $85 and two hours, participants will receive a knife to keep. Soon, a knife-skills class will be added. And although knives are displayed throughout the store, ranging in price from $35 to $1,000, Zias said needs for a home cook are simple. “Someone cooking at home every night just needs the Top 3: A bread knife, a chef knife and a paring knife,” he said. “A basic set shouldn’t cost more than $150.” Thank a Teacher...
