Places Continued from page 35 Kitchen is her bakery while Arcadia mom heals Carrot Cake with Cream Cheese Frosting CAKE Dry ingredients: 2 cup fl our 2 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 2 tsp. cinnamon Wet ingredients: 1 3/4 cup sugar 1 cup oil 3 eggs 1 tsp vanilla 2 carrots 1 cup shredded coconut 1 cup chopped walnuts 1 (8 oz.) can crushed pineapple Frosting 1 (8 oz.) package cream cheese ¼ cup butter 2 cup powdered sugar Extra diced walnuts to put on top. Cake instructions: Preheat oven to 350 degrees. Grease and fl our 9 x 13 pan. Mix dry ingredients, make a well in the middle for wet ingredients to be added. Add wet ingredients. Mix with wooden spoon, and then add carrots, coconut, pineapple and walnuts. Bake for 45 minutes. Remove cake from oven, center will have collapsed a bit. Let cool Frosting instructions: Beat butter and cream cheese. Add powdered sugar and beat. Frost cake when completely cooled. By Amanda Goossen Carrie Klain has dreams for her baked goods. In 2005, Carrie moved to Arcadia from her hometown of Laguna Beach, Calif. She was newly married and after working as a much sought after hairdresser by the shore, she was looking for her next path. “I was making everything. Candies, chocolates, lollipops, baked goods of all sorts,” she said. “I was going to name my store Baked on Camelback or Baked on Tatum, depending on where we found a great storefront,” Carrie said. Months later, however, pregnant with her fi rst child, Carrie found herself suffering from an illness she could not explain. Interstitial cystitis (IC) was the fi nal diagnosis, a condition that results in recurring discomfort or pain in the bladder and the surrounding pelvic region. Other autoimmune disorders also were discovered, which led to chronic depression and anxiety. “The anxiety and depression that stem from these illnesses have been the worst part,” Carrie said. “The anxiety is terrifying.” Carrie went into remission after her fi rst daughter, Aubrey, was born. Carrie said things changed after that. Aubrey came to know her mom as someone who did a lot, who took her everywhere, planned parties and baked up a storm. “I used to stay up ‘til midnight and be up at 5 a.m.,” she said. “I was always super busy and active.” Her second pregnancy brought the IC back. Her life has changed dramatically. Now, her second daughter, Cassandra, is 3 years old. Carrie waits hopefully to get back into remission. “Cassandra has only ever known me this way,” she said. “I can’t stand for very long. I’m tired. But Aubrey remembers when I was different.” The dream of a bakery is still alive.
