Page 42 October 2012 Toasted Sesame Ginger Salmon (Original recipe from www. howsweeteats.com, with adjustments.) 1 1/2 lbs. raw salmon 1/4 cup olive oil 2 tbsp. toasted sesame oil 2 tbsp. rice vinegar 2 tbsp. brown sugar 2 tbsp. soy sauce 2 garlic cloves, grated 1 tbsp. freshly grated ginger 1-2 tsp. toasted sesame seeds 4 green onions, sliced In a large bowl or baking dish, combine olive oil, sesame oil, soy sauce, garlic, ginger, vinegar, brown sugar and whisk well until combined. Add salmon to the dish or place everything in a plastic bag, then refrigerate and marinate for 30 minutes. Heat a grill pan over medium heat. Season salmon with salt and pepper. Place skin side up and cook for four minutes. Turn over and cook for another two minutes. Check doneness. Depending on the thickness of salmon, it’s fi nished cooking when the fi sh fl akes apart with a fork. Remove and serve immediately with a sprinkling of toasted sesame seeds and green onions. Serves 2-4. These shops will cure the coffee craving By Amanda Goossen Last year when I arrived in Phoenix there were two things I was looking for, coffee and cupcakes. The cupcakes were taken care of almost immediately when I discovered Urban Cookie and Ollie Cakes in Central Phoenix. The coffee took a bit longer. Fifteen months and hundreds of cups of coffee later, I have discovered some of the most delicious, fl avorful cups of java I’ve ever had the pleasure of sipping. To qualify as a supreme coffee joint, it not only needs a great coffee bean, but be a place where I want to hang out with a book or my computer and it absolutely, positively must have homemade baked goods and snacks. Terra Java 3619 E. Indian School Road This is that comfortable little coffee spot everyone loves and keeps in their back pocket for a study room, a meet-up with friends or quite simply just a great meal and cup of coffee. Page 43 October 2012 Places Continued from page 41 No-Bake Recovery Bars (Adjusted from recipe in Muscle and Fitness Magazine ) 1 cup oats 4 scoops chocolate whey protein powder 1 cup dry fat-free milk powder 1/3 cup sun fl ower seeds 1/4 cup dried cranberries 1/4 cup coconut fl akes 4 tbsp. peanut butter 1 ¼ cups water 1 tsp. vanilla Nonstick cooking spray Spray a square baking pan with nonstick spray. Combine oats, protein powder, dry milk, seeds, and cranberries in a medium bowl. Stir in peanut butter until mixture is crumbly. Add water and vanilla and mix until achieve a smooth, doughy consistency. Increase water if needed. Spoon mixture into pan and spread evenly. Sprinkle coconut on top. Refrigerate two hours. Use a sharp knife to cut bars into equal- sized portions. Makes nine servings. Campbell placing his homemade mozzarella on a wood- fi red grill and infusing it with fl avor, then placing it on lightly grilled bread and serving it with fresh tomato, is out of this world. The Cotto (or Cooked) options range from mushroom with mozzarella, truf fl e and egg, a squid ink risotto, a dumpling with butternut squash and pork, and handmade gnocchi in a farmers-market Bolognese. For a main dish, the Grilled plates include pork belly, short rib, market fi sh and rolled veal breasts. Each is a work of art and an education in fl avor. Chef Campbell’s most incredible skill is his ability to establish an impressive level of fl avor without tainting his product. Each ingredient can stand on its own. Growing up in Worcester, Mass. he played basketball, soccer, baseball and ran cross country. The oldest son of parents who are both family practitioners, Matt said there was never pressure to be an overachiever. Looking at his resume, that might be hard to believe. Hitzhusen went to Liberty College in Virginia where he studied history and Italian studies. After graduation, he enrolled with Literacy AmeriCorp, teaching basic education and GED-prep to young adults in South Florida. His students had faced learning or behavioral challenges in regular schools. In 2002, Hitzhusen moved to Tucson and began law school at the University of Arizona. After graduation in 2005, he moved to Phoenix. His passion, however, remained in something far from the courtroom. “Even while in law school,” Hitzhusen said, “I wasn’t convinced I’d be a lawyer.” Having become certi fi ed as a personal trainer in 2001, Hitzhusen enjoyed his time in the gym and saw a future in helping others discover his love for physical fi tness. He led a few personal training sessions at his gym, and soon what began as a hobby turned into a life path. In no time, Hitzhusen was a full-time personal trainer. Moving to the 2 Be Fit gym in Arcadia, he watched his client base quickly grow to more than 50. After fi ve years of growth, “I needed a new habitat,” he said. In August, Hitz Personal Training at 4290 E. Indian School Road opened. The facility is set up for one-on-one, tandem, small group (three-six people) and large group (12-15) personal training. Sports-speci fi c boot camps for high school students as well as daily boot camps for large groups are available. “My goal,” Hitzhusen said, “is to push the envelope with what your comfortable with, without making you not want to come back.” He has yet one more accomplishment.
