Page 40 July 2012 Seven trucks started as a team, working through the city, supporting each other and developing ways to get their names out to the public. Two years later, the coalition is now made up of over 40 trucks and mobile food companies. Short Leash can now be found serving up their imaginative menu of hot dogs to the public in a variety of locations: Third Thursdays at Whole Foods on Raintree. Tuesday lunch at Urban Cookie. Phoenix Public Market on Wednesday evenings, Friday afternoons and Saturdays. Yet their most exciting venture has just begun. The Short Leash Sit and Stay is the Moore’s fi rst peek into a permanent restaurant location. Every Friday, from 6 p.m.-8 p.m., located in a small lot behind Stinkweeds records on Camelback and Central, they try out a new side of their venture. The Sit and Stay has large barrel tables, trendy metal chairs and strings of twinkly lights, adding the perfect ambiance to a fun gathering spot. Kat creates a Sit and Stay menu, which includes a couple regular menu favorites, but also takes the time to experiment within their regular offerings for your palate. Sausage sliders, a nosh plate, a fl at bread pizza and pigs in a blanket can be found adding another dimension to a menu which already brings a ton of pizzazz to your mouth. Sit and Stay is a gathering place, a place that feels like home. It’s a spot to sit and enjoy each other’s company. Even play some cards. Each table is adorned with a deck of cards, UNO being one of the most popular. On many occasions, guests fi nd themselves in a game with the people around them. On one evening, I witnessed an older couple playing cards with a young family. Another group was chatting with the table next to them about the unexpected, delicious fl avors within their hot dog. And in line was a young man, with his wife and screaming newborn waiting for him to return with take-out. Sit and Stay is for everyone. Even the heat can’t keep people away. Page 41 July 2012 ITALIAN POTATO SALAD 5 red potatoes (1 potato per person), boiled until soft and cut in cubes 1 shallot, diced (you can use red onion, green onion, or chives) 4 cloves of garlic, fi nely chopped 1 bunch of Italian parsley, fi nely chopped 2 tablespoons of Italian Seasoning 2 large pinches of salt 2 large pinches of red pepper Extra Virgin Olive Oil (1/2 cup or as much as you like) Mix well and serve at room temperature. Can be made one day ahead. Add a little lemon juice to stop the potatoes from turning brown. Remove from fridge and bring to room temperature before serving. Potato salad comes from the Italian countryside By Amanda Goossen Anna Tigue has lived the past thirty years in Arcadia, but Italy will always be her home. Born and raised in Rome, the heart and soul of Anna’s kitchen remains immersed in Italian tradition. Tigue wears many hats as mother, grandmother, St Thomas the Apostle School cafeteria cook, and caterer, but her cooking perspective is simple. “I do Old World, rustic Italian cooking,” Tigue said. “My mom lived with my family for the past 22 years. Everything I know, I learned from my mom.” Although Tigue moved to America as a child, fi rst to New York and eventually to Arizona, she lived with her aunt and uncle in the Italian countryside every summer. “We picked everything we ate”, Tigue said. “We made our own olive oil.” Now as a cook at St Thomas the Apostle School, Anna uses her know-how to create meals everyone remembers. “The best thing about this potato salad,” Tigue said, “it’s olive oil based. You don’t have the extra fat from mayonnaise, and you don’t have to worry about leaving it out at a picnic and the mayonnaise going bad.” She peeled a potato with ease and precision, then looked up and said “Use red potatoes. They are slightly sweeter, cook faster and peel easier.” She then spilled secrets on the best way to chop herbs like parsley. “I use scissors. You can get a special pair at Sur La Table.
