This husband-and-wife team celebrated their second year in the food and dining business. By the looks of their hard work, devoted fans and inventive mobile food ideas, this latest achievement is only the beginning. Two and a half years ago, Brad and Kat Moore had reached a turning point. After traveling through Switzerland, Brazil and Holland with Brad’s soccer career, they settled in Phoenix. Now with a full-time job, Brad envied Kat’s schedule and the fl exibility of her design career. He was antsy and wanted something different for their life. “Kat is a fantastic cook, and we had always had a running joke about starting a restaurant,” Brad said. When Brad mentioned leaving his job to start a restaurant, Kat said she was concerned. “It’s so expensive and such a huge responsibility. I knew we had to go small, “ Kat said. Brad’s next idea was a food truck. The new trend in gourmet food trucks in Los Angeles and New York had him mulling over the possibilities. “I told him no,” Kat said. “I’d only ever known food trucks as roach coaches.” But after seeing a program on the Food Network, Kat understood. She recorded the show, and together they set out on a plan. “We came into this ignorant,” Kat said. “We wanted to eat and cook. We wanted to enjoy it.” While planning for their dream, Kat knew they would need to focus their food on one concept. She envisioned hot dogs. Brad didn’t agree. “He doesn’t like hot dog buns,” said Kat. “He hates that you can’t fi ll up your hot dog with a bunch of ingredients.” After trying a multitude of bread options, Short Leash found the item that would become their trademark. Naan fl at bread would replace the bun and become the wrap for a variety of fresh and original ingredients. The Short Leash menu, created entirely by Kat and taste-tested repeatedly by Brad, is a surprise to fi rst-time guests and a beloved friend to those who return again and again. The Oliver is topped with sauerkraut, Swiss cheese and a dollop of Thousand Island Dressing. The Igby treats your mouth with sweetness and tang as it is smothered in coleslaw, crumbled blue cheese and BBQ sauce. The Aiko, one of my personal favorites and one of Short Leashes biggest sellers, tantalizes taste buds with mango chutney, diced jalapenos, red onions, fresh cilantro and mayo. I’ve also been known to repeatedly sink my teeth into the Moki, with roasted green chilies, sautéed onions, fresh tomatoes, pinto beans, cheddar cheese and mayo, but only when I can wrestle it away from my husband. Each Short Leash dog can be made on your choice of dog: regular, spicy beer hot, beef, bratwurst, chicken and veggie. When I order, however, I leave the choice up to the chef. In their fi rst year, Short Leash would work hard to fi nd locations and patrons. Bringing an entirely new way to eat to more than a million people was a job in itself. Three months after they started, they began to see other trucks hitting the streets. They decided to group the trucks together, and with Kat’s impressive planning and organizational skills, they started the Phoenix Street Food Coalition.
