They eat slowly, luxuriously, between sips of wine. He whispers in her ear. She laughs and pops a shrimp in her mouth. The sun is slowly setting and frames the one-of-a-kind city view with a warm and gentle light. It is silent up here, almost unreal. Absolutely perfect. This is Different Pointe of View. “Where do I draw my inspiration?” chef Antony DeMuro repeats in a surprise tone. “Seasons are the main inspiration when drafting a menu, but look at this view.” “If I have a bad day all I need to do is come out here, take a deep breath and let the moment inspire me. “I can ensure you,” he said, “it is pretty easy when you work in a place like this.” Born in Chicago, DeMuro’s career started in Phoenix where he moved when he was 8. After starting as a dishwasher at a small restaurant in the Valley, his chance came up when one of the line cooks did not come to work. “I had always been fascinated by the cooks, the kitchen and the rhythm of the line. So, while washing I would watch and bug them all the time trying to learn,” DeMuro said. “Then one day, a guy didn’t show up and they called me. I started cooking.” And after tasting his creations at this point in his 29-year career, I can say, I am glad he did. As you make your way into the dining room, the fl oor-to-ceilings windows showcase the dramatic panorama of the Valley’s desert landscape, the city’s twinkling lights and breathtaking sunset. Tables are covered with white linens, and although the restaurant is a large room, the lighting allows for intimacy. At the few tables outside, guys in fedoras check their Facebook statuses, a couple quietly smokes, and a woman reads on her iPad. The place has an elegant, but never- boring energy and an assorted crowd of interesting-looking people, including one night a table of three arguing about design and a gentleman wearing his hair in a bun and sporting a hot pink handkerchief in the breast pocket of his suit. The two-page menu is inviting, clean and seasonal, but most of all original. “Our dishes have to be fresh, unique and colorful,” DeMuro said. “We cook simple stuff, letting our creativity to do what it does best. “But eventually it comes down to the energy we put into a plate, into the ingredients and most of all in the uniqueness of the dish.” As dishes start coming out the kitchen and landing on our table I understand what chef DeMuro means. He pairs a delicious and tasty braised duck ravioli with roasted butternut squash brandy coulis, shaved Perigord truf fl es and Parmesan, and yet the appetizer is very light. His cooking has a clarity and fi nesse. That lightness of touch extends to the main courses: A colorful port-braised short-rib pot roast with organic carrot Parmesan risotto, fresh pea shoots, roasted tomato coulee; a wonderfully arranged cherry wood smoked Venison strip loin, creamy Piquillo pepper hash browns, and organic carrots in a gorgeous balsamic blueberry reduction. Not only do DeMuro and his culinary team have the creativity to re-think and transform common ingredients, the presentation never fails to please the eyes. To enhance the beauty of the courses, the self-proclaimed “wine guy” Eric Spragett takes us on a trip to Italy, Arizona, California and Australia through an impressive wine list. He is relaxed, engaging, knowledgeable. Spragett, the sommelier, is known to say: “The best wine is the wine you like best.” “We enjoyed what we do so much,” DeMuro tells me. “We don’t do what we do for the guests.
