26 AUGUST 2025 I f you’re looking for an unforgettable Arizona escape, just follow Highway 87, the “Beeline Highway”, into the heart of Rim Country. This scenic route leads travelers through the sprawling Tonto National Forest – Arizona’s largest, and the most visited “urban” forest in the nation. Stretching nearly three million acres from the edge of the Phoenix metro area to the Mogollon Rim, the landscape transforms dramatically, from flat desert terrain to pine- covered highlands reaching elevations near 8,000 feet. Along the way, saguaros yield to towering evergreens in the world’s largest stand of ponderosa pines. With trout-filled creeks, dramatic rock formations, and cool mountain air just two hours from the Valley, Rim Country offers a refreshing change of pace and scenery. As you cruise north, keep an eye out for a cheerful red and yellow building just past the “Entering Strawberry” sign. That’s PIEbar, a cozy roadside eatery where big flavor fits in the palm of your hand. Owned by Kimberly Brennan, PIEbar specializes in handmade empanadas that blend tradition with a touch of magic. “Our inspiration came from a woman in Puerto Vallarta who sold out of her empanadas every morning by 6:30,” Brennan recalls. “We wanted to capture that same freshness and soul.” PIEbar’s rotating menu ranges from green chili to mushroom stroganoff to the fan-favorite lemon bar empanada, described by one customer as a “spiritual experience.” Seating is outdoors, under patio umbrellas or a sprawling oak tree, and the ambiance, especially during Strawberry’s signature pink sunsets, is as warm as the empanadas. About twenty miles outside Payson sits Kohl’s Ranch Lodge, a rustic retreat shaded by pines and nestled along Tonto Creek. Established around 1917 as a working cattle ranch, the lodge became a gathering place for local families and visitors. Today, it remains a cherished escape with studio lodge rooms and Creekside cabins, many complete with private decks and Jacuzzis. On-site dining at the Zane Grey Steakhouse adds to the appeal, whether you’re seeking a family getaway or a peaceful place to unwind. For outdoor enthusiasts, Rim Country is a mountain biker’s dream. With nearly 900 miles of trails, there’s terrain for every skill level. In Pine, electric bikes offer a leisurely way to explore, while Payson’s adrenaline- pumping routes satisfy thrill-seekers. “We have a tremendous variety of trails and scenery,” rider Wayne Gorry said. “Whether you’re out for a casual ride or something intense, it’s all here.” If you prefer to explore on foot (or with a fork), pay a visit to Strawberry’s historic schoolhouse or stop by the Rusty Pine Cone gift shop in Pine, where locals Gene and Leigh welcome every traveler like an old friend. Just down the road, craft beer flows at THAT Brewery, and the Honey Stand tempts with sweet treats from Arizona bees. No trip is complete without seeing Tonto Natural Bridge, a stunning limestone arch over a pine-shaded canyon, or grabbing a spaghetti supper at By the Bucket, and don’t forget the “bodacious” meatballs.
