The organic arugula and pepper bacon salad includes dates, toasted pumpkin seeds, radishes, heirloom carrots and cabernet vinaigrette, with a warm gruyere cheese croissant on the side. The Greek Caesar has organic gem lettuce, Kalamata olives, grape tomatoes, cucumber, house-made croutons and shaved parmesan with a Caesar vinaigrette. Both dressings are made in-house. “My favorite is the Greek Caesar, and that’s no surprise, with my name!” Chef Eugenia Theodosopoulos – who creates the salads – said. There are nine salads on the menu, including the Berry Chop available throughout the summer. “Most of our salads were created by the founders and have remained on the menu since 2013,” Marketing Director Karissa Threadgill said. “Over the years, we’ve introduced new salads as a limited-time offer that were so popular that we brought them onto the menu permanently. These include the Greek- ish and Citrus Thai.” The Greek-ish comes with roasted red peppers, Kalamata olives, chickpeas, cucumbers, banana peppers, feta and a lemon vinaigrette. The most unique salad is the Citrus Thai Chop with Thai peanut dressing (made in-house), pickled carrots, jicama, orange segments, roasted red peppers, cucumber, green onion, peanuts, cilantro and sesame seeds. Dressing options include strawberry basil vinaigrette (for a limited time), red wine vinaigrette, lemon vinaigrette, lemon Dijon, Thai peanut, BBQ ranch and 1000 island. James Beard semifinalist, chef, and owner Bernie Kantak created each recipe. The Original Chopped Salad is the most popular – according to Chef Kantak, it’s the top-selling menu item daily. The dish was created in 1998 and is available at The Gladly, Citizen Public House and Beginner’s Luck. The salad features marinated tomato, sweet corn, pepitas, black currants, asiago cheese, wild baby arugula, Israeli couscous and cold smoked salmon dressed up with a buttermilk herb dressing and mixed tableside. Every Wednesday in August, all three restaurants will offer their signature Original Chopped Salad for $12. The Caesar, heirloom tomato and feta, Henry house salad, seared tuna chop, and sprouts and squash salads are $12-$22, depending on how you customize.
