24 FEBRUARY 2023 I t’s trendy these days to eat clean, right? But what does it mean, exactly? Simply put, it means eating fresh, whole foods that are minimally processed. As a wellness coach, I help clients focus on eating more plants, legumes, whole grains, nuts and seeds. It is also important to get in the habit of flipping the packaging over and reading the ingredients before you buy. Products with five or fewer ingredients, without artificial coloring and flavorings, are the best place to start. Think about going back to basics with food. Simple food can still have lots of flavors. Preheat oven to 400 F. Toss cauliflower with oil, ½ cup of the buffalo sauce, garlic granules and salt. 2. Roast for about 25-30 minutes. When it is done, toss with remaining buffalo sauce. 3. Put topping ingredients in blender. Blend until smooth. 4. Assemble tacos in shells with buffalo cauliflower, pinto beans, tomatoes and sauce. 1. Put the dates in a small bowl and pour boiling water to cover. Let sit for 20-30 minutes. 2. Chop the chocolate and put in a double boiler or microwave to melt. 3. Remove the pits from the dates and put in a high-speed blender with the plant-based milk. Blend until smooth. 4. Add the melted chocolate and pour into individual jars or ramekins. Refrigerate until ready to serve. These will last up to two weeks in sealed containers in the fridge. 1. Sauté mushrooms in a pan for about 10 minutes . 2. Cook soba noodles and toss broccoli into the pot when there are two minutes left on cook time. 3. Drain, put back in the pot, and add spinach. 4. Once wilted, add cooked mushrooms and sauce. 5.
