Cleaning out the pantry is a good place to start. I encourage people to minimize processed foods as much as possible and go for products with five or fewer ingredients. Start reading the ingredients on food labels and try to eliminate any products that have ingredients you can’t pronounce, as well as these offenders: Artificial colors: These will be labeled as Blue #1, Blue #2, Green #3, Red #3, Red #40, and Yellow #5. Added sugar: Look for dextrose, fructose, glucose, lactose, maltose, sucrose, dextrin, maltodextrin, and high fructose corn syrup. Artificial sweeteners: Sucralose, aspartame and saccharin. Festive meals for the fall Instant Pot Pumpkin Pasta SERVES: 6 Easy Mediterranean Salad SERVES: 4 1. Add the oil to the Instant Pot and turn on the sauté setting. 2. Add the onion and garlic and cook for five minutes, stirring frequently. 3. Leaving the sauté setting on, add the broth, pumpkin puree, coconut milk, miso paste, tomato sauce, nutritional yeast, salt, sage, thyme, and pepper. 4. Stir well to combine. Add pasta and stir again. 5. Cancel the sauté setting and put the lid on the Instant Pot, making sure the nozzle is set to “sealing.” Select “pressure cook” and set the time to five minutes. 6. When time is up, carefully switch the nozzle on the lid to “venting.” 7. Stand back as a lot of steam will shoot out of the top of the lid. 8. Top with fresh parsley if desired. 1. In a large bowl, mix the beans, tomatoes, cucumber, red onion, parsley, olives, dill, basil, and sun-dried tomatoes. 2. Whisk together the dressing and toss together. Braggs Apple Cider Vinegar • Juice of one lime • Juice of one lemon • 1 tsp. pink salt • ½ tsp. oregano • ½ tsp. garlic granules • ½ tsp. pepper Banana Ghosts & Cutie Pumpkins SERVES: 12 1. Peel the bananas and cut in half. 2. Now with the pointy side up, press two mini chocolate chips in for the eyes. 3. Peel Clementine oranges. 4. Trim your celery into about ¼” thick x 1” stems. 5. Set aside some single leaves that have a stem. 6. Now insert the celery stem and celery leaf, and enjoy!
