July is a great time to eat simple and light. Fresh salads, lots of fruit, and not too much time in the kitchen. If you are taking a road trip this month, here are some ideas of things to throw in the cooler: Apples, bananas and grapes travel well. Carrots, celery, and sugar snap peas. Stack in a small mason jar with hummus at the bottom! Chia pudding, mock-tuna sandwiches, chia bites, lentil salad (find recipes on my Instagram). Lara bars – these are my favorite bar because there are only 3-5 ingredients. Mary’s Crackers, Trader Joe’s turkish figs, oatmeal packets, home-made trail mix and almonds are also good snacks for road trips. And, in keeping with the holiday theme, here are some fun, healthy recipe ideas for Fourth of July: Effortless summertime meals are best Watermelon and mint fruit salad Pineapple salsa 1.
