As one of the managing partners – and the head chef – of Genuine Concepts, the restaurant group that includes all five The Vig locations, their experience came in handy with opening their latest concept: The Genuine. “The Genuine will deliver a unique and refreshing twist to the neighborhood eatery, focused on wood-fired specialties including local ingredients from some of Arizona’s best producers,” menu-creator Pacheco said. Highlights include shareable items such artisan meats and cheeses, wood-fired prawns and octopus, local beef, artisan pizza and handmade pastas. “This modern eatery will feature a wide selection of local craft beers, wines and cocktails to go along with the creative dishes,” Pacheco said. The Genuine is owned by Tucker Woodbury and Jim Riley and is scheduled to open in the first week of April. But before that, the eatery – formerly a Vig location on 16th St. and Bethany Home Road – underwent a three- month restoration process. The new layout features a 1960s Ralph Haver-design (The Vig actually used to be a bank) and will showcase the original layout, including the vault, with its “egg crate” pattern, that now serves as the back bar. “We are excited about so many parts of the menu,” Pacheco said. “We do not doubt that our guests will come in with friends and find many of their favorite dishes.” genuineconcepts.us NEIGHBORLY PUBLIC HOUSE/ST. URBAN One of the familiar names in Arcadia cuisine, Chef Christopher Collins, recently opened his eighth and ninth restaurants in November 2021 and April 2022 at The Colony on 7th St. and Missouri Ave. Collins, who r uns Common Ground Culinary Restaurant Group (The Collins, The Macintosh, Sweet Republic and Wally’s Pub), said that both spots serve elevated American fare. Popular items from Neighborly Public House include the cast iron cornbread (a family recipe with hatch green chilies, jack and cheddar cheese, sweet corn, cornmeal and whipped honey butter), broiled oysters Rockefeller and the Collins Bros. prime rib. Upstairs at St. Urban, guest favorites include the Jamon (dry, cured ham) deviled eggs, giardiniera chopped salad and the Provencal flatbread (fresh mozzarella, vine tomatoes, capers, roasted garlic, olives, extra virgin olive oil and herbs). “We designed Neighborly to feel like you’re walking into a friend’s home,” Collins said. “One unique aspect is our 30-foot gallery wall along the south wall of the dining room. It is one of the coolest areas of the restaurant.” St. Urban also has a mural along the north side of the building that stretches from Neighborly Public House on the ground floor up to St. Urban. The mural transforms from an angular graphic downstairs into a flowering, flowing graphic upstairs. The restaurants each have a unique, extensive drink menu that includes local and national spirits.
