24 JULY 2021 Grilled Mediterranean Vegetables on Naan Bread Ingredients Directions • 2 zucchinis, sliced thin, lengthwise • 2 red peppers, sliced • 2 cups mushrooms, sliced • 1/4 cup sun-dried tomatoes (jar type) • 1/4 cup kalamata or green olives (or a mixture of both) • 1 can artichoke hearts, quartered • 1 cup grape or cherry tomatoes, halved • 1 batch hummus • Naan bread (5-6 pieces) 1. Spray the zucchini, red peppers and mushrooms with avocado oil spray and shake on some salt, pepper and garlic powder. 2. Put this in a metal vegetable grill basket and put on the grill. Cook until the vegetables are done, stirring every 10 minutes or so. 3. When they are close to being done, add the naan bread to the grill (straight on the grates) to toast up and get grill marks. 4. Mix the vegetables with the sun-dried tomatoes, olives, artichoke hearts, and tomatoes. 5. Layer naan bread with hummus and top with the vegetable mixture. Serves 5-6 1.
