Chefs sometimes make food that they like, but they don’t think about the guest. Also, talking with other chefs and seeing what they’re doing, looking at trends, but not catering to trendiness. What’s new for the fall season? I love mushrooms – you can get them all year long, but some mushrooms tend to be tastier in the fall. Fall is harder with produce because it’s a small window of time, so carrots, late-summer corn. What is the most challenging part of being a chef? I think it’s just sheer hours. I have three boys, so the number of hours you’re away from your family takes a toll. You miss out on some things, but you do it because you love it. Starting out, I had to prove myself, but now, it’s the hours. Favorite type of cuisine? I like more Mediterranean flavors but I pair them with classic American dishes. I like simple food. It doesn’t need to have 64 ingredients. For me, it’s getting the best ingredient and adding flavors to that. What is your role with Chefs in Schools and Careers through Culinary Arts? I started at Chefs in Schools when I was in North Carolina. The program partnered schools and chefs together. My role was to go in (at the elementary school level) and talk about food. We would tie it in with a lesson they were learning. When I moved back here in 2015, I was at a farmer’s market and saw the Veggie Valet, which is a project of C-CAP. I talked By Mallory Gleich F rom the desert to the Midwest and back again, Chef Rebecca Tillman has had a fair share of professional kitchen experiences. Arcadia News caught up with Chef Tillman to learn how she is enjoying her new position at Lon’s at The Hermosa Inn. Where did you grow up? I mainly grew up in Phoenix. I’ve lived in other places in the world, but mostly here in Phoenix and right now, I live in Queen Creek. I went to Northern Arizona University and the Art Institute of Phoenix, and I studied hospitality administration at NAU. Did you always know you wanted to be a chef? No. I thought I was going to be a surgeon. That’s what I wanted to do. Growing up, that’s what I always thought I was going to do. And then I decided that I probably wasn’t all that great at math. I think spending as much time as necessary to do that and be as studious wasn’t really what I wanted after all. At NAU, I did the hospitality program because I wasn’t sure, and I just fell in love with it. Who taught you how to cook? My nan was the first person I remember cooking with. We used to make these buttermilk buns – my whole family is from Ireland – and we would make these delicious potato buttermilk buns and pies and stuff like that. Where was your first professional position? The Arizona Biltmore. I started there when I was in culinary school. I began in banquets and worked my way through all the different positions. I left there as a restaurant chef. Where else have you worked? I’ve worked at the Biltmore Estate in Asheville, North Carolina. I’ve worked at Destination Kohler in Kohler, Wisconsin, Pointe Hilton Squaw Peak, The Phoenician, and now Lon’s at The Hermosa Inn. Do you have a favorite chef that you’ve worked with? The chef I’ve worked most with is Rick Boyer at The Phoenician. He’s been a mentor and a solid part of my professional life. He’s to someone who was part of the group, and I thought it was a great program. I had no idea it existed. I got involved with it, and I was asked to be a chef mentor at Paradise Valley High School. Ever since then, I’ve been a big supporter. Favorite part of being a chef? Now, it’s more about seeing others flourish. Helping people conceptualize a dish and seeing the pride they have, and then when it goes out, the guest’s reaction. It’s never been about me. It’s always about the team. Making sure the team is flourishing. The creativity part is great too. Do you have a memorable moment from your career? At the Biltmore Estate, the last year I was there, we did 450 weddings – and there could be four in a day. My job was to make sure the teams were doing what they should do. It was 9 p.m., and we realized we didn’t bring all the salmon from the kitchen. We were a mile and a half away (it was an 8,000-acre estate) – so I had a golf cart, and the golf cart dies. No one is answering the radio. It’s dark out. It’s starting to rain. I decide to run – in my clogs – back to the restaurant. I end up putting the salmon in my car, and then ran back in the rain to make it back in time to fire the salmon. The guests never found out. Do you have a motto that you live by? I worked for someone that would say, “every day, every day, every day.” You’re going to do the same things every day. I catch myself saying that to people now. It makes sense because we’re looking for consistency. At the time, it was like, don’t say it again. But now I say it, which is crazy! In the Kitchen with Lon’s at The Hermosa Inn’s Rebecca Tillman always been very ‘in my head,’ even today, like, ‘what would he do, what would he say.’ He has such a high standard, so I’m always trying to achieve that standard. Having him in the back of my mind, or a phone call away, or even in the same building – knowing I can bounce my idea off of him and he’ll give me an honest answer is super important. How did you come to work in the Midwest? When I was at the Biltmore Estate in North Carolina – I was there for almost seven years, it’s just an iconic property – I got a call from Rick Boyer, who took a position in Wisconsin. He said, ‘I think you need to come out here and check this out, this might be a great option for you,’ because he knew I was looking to move out of North Carolina. I went out there, and it’s incredible; it just happens to be in the middle of nowhere, Wisconsin. After some decision making, it was the right move. I do not miss it, though. Two to three winters there was enough. Tell us about the work you did at Destination Kohler. Destination Kohler is owned by the Kohler company. Mr. Kohler came up with the idea of bringing well-known people to this property – that was once an immigrant dormitory/factory – but no one’s going to drive to Wisconsin if you don’t know it’s there. It put the property on the map. The Kohler Food and Wine Festival and the Festival of Beer events had been going for 10 years when I started working there. My job was to plan the events. We would prepare the programming and the logistics, like who was coming, what chefs were coming, winemakers, how are they getting there. Unlike some of the other festivals, we would do demonstrations and would feed everyone. It was a tremendous amount of work – we did 191 events in three days. The beer festival was two days, lots of beer, but around 15,000 people were there for that event. It makes you extremely organized. Is there an inspiration behind your recipes? Seasonality is a big thing. Thinking about what is the best produce you can get, what are the options that we have. And then from there thinking, okay, what is something different that I haven’t done before?
