Arizona.” Tarbell, who owns Tarbell’s restaurant, The Tavern and The Wine Store in Arcadia will kick off Season 7 of “Check, Please! Arizona” in January 2017. As host, Tarbell will moderate lively roundtable discussions with Arizona residents on their dining experiences across the state. “I’m extremely excited for this opportunity,” said Tarbell. “I’ve had a fair amount of experience cooking on television, but this is different. I get to be on the other side and help tell the story. Tell the story of the mom and pop shop, tell the story of the kid who has worked his way up to be head chef, tell the story of someone trying something new. It’s a great feeling.” As for his start in the culinary world, Tarbell stumbled into a cooking job in high school and became obsessed. Originally from New Hampshire, Tarbell studied cooking at L’Ecole de Cuisine La Varenne in Paris, and bounced back to the East Coast before coming out to Arizona. Tarbell was the director of Food and Beverage at Restaurateur Mark Tarbell selected as new host of ‘Check, Please!’ The Boulders Resort in Carefree, Arizona. There he developed a world-class wine program (over 800 selections) and supervised four restaurants and a bakery. Under his guidance, the readers of Conde Nast Traveler selected The Boulders as one of the “Top 25 Resorts”. “It was my dream to open a restaurant,” said Tarbell. “So, I opened Tarbell’s. It’s truly a vision of everything I love in food, and wine, in one place.” “Check, Please! Arizona” has always been a show that Tarbell loved. Getting the chance to host it was an unreal dream. “My goal is to never become a television personality. I love that this show has the educational value associated with it, and it’s something that I am so proud to be part of,” said Tarbell. “I’m a very passion driven person. Obviously cooking is a passion of mine, storytelling is a passion of mine. And this combines both of those. This is the perfect extension of my passions.” Tarbell, whose namesake is in the Arcadia neighborhood, can’t wait to dive into more of what the Valley has to offer. “I’m excited about tapping into this market. This November, Clever Koi in central Phoenix celebrates three years of serving Asian-inspired comfort food and the restaurant doesn’t show any signs of stopping. However, the secret to Clever Koi’s longevity starts with the passionate team who brought the concept to life and the people who help shape the experience for each guest. “We all came together because we shared the same vision and wanted to bring something different to the city,” said General Manager Nick Campisano. “It’s all about our staff. If our staff is well versed and knowledgeable, they’re going to be very confident with customers. You have to know your guests, know what they like, what they want, and overall, give them a great experience.” Pair the emphasis on service with exceptional one-of-a-kind flavors delivered in a lively metropolitan atmosphere, and there’s a lot working in the restaurant’s favor. Chef Jared Porter has developed an ever- evolving menu packed with finesse and flavor. To start the meal, the selection of three different steam buns is a popular choice. The three buns consist of a pork belly with hoisin, peanut and cilantro; a chicken and waffle made with a kimchi waffle, chili maple syrup and scallion, and a soft shell crab with fish sauce aioli, cucumber slaw and black sesame. Another great starter includes their assortment of dumplings, which features several adventurous, yet rewarding options like the Pig Face dumpling with kimchi, Sriracha sauce and pickled peppers; and the Rabbit Gyoza with coriander butter, heirloom carrot and wasabi gastrique. For those looking to stick to something more familiar, Clever Koi offers dumplings stuffed with summer corn, yuzu cherry tomato, Thai basil and harissa crema, or short rib with pickled onions, celery leaf, shiitake dashi and porcini oil. Notable small plates include the Tuna Chips dish with fresh ahi crudo, wasabi guacamole, rice paper and aioli as well as the Calamari Fries with yuzu aioli, mint and furikake. For main dishes, if you’re looking to fill up on protein, the Crispy Pineapple Duck and Thai Chili Beef are rich, savory and cooked to perfection. The winter season is a great time to savor one of Clever Koi’s noodle bowls, filled with steamy broth and complex umami flavors. The ramen is available in three options: pork belly, kimchi, bamboo shoots and a soft egg; chicken, daikon, Szechuan peppercorn, pickled leaks, and lemon jam; or wild mushroom, fava beans, kimchi and shiitake dashi. The beverage menu is also exceptional, with some of the craftiest cocktails in town and an assortment of libations to choose from. Whether you want it on the rocks, shaken, stirred, poured over a single giant ice cube or served with over-the-top presentation in a tiki glass, Mixologist Joshua James has the ideal drink. As Clever Koi kicks off their third year, their success has allowed them to expand the concept. The team is currently hard at work on a second location to bring their admired Asian fare to Gilbert. “There’s a great story about the koi fish and how it overcomes obstacles and actually becomes a big dragon.
