Although the space was entirely reworked, there are still several elements of the original oil changing station that exist in the space, specifically below the building. Travis Radevski, the owner of Sip, has teamed up with Rich Furnari and Jason Asher of Counter Intuitive to transform what was previously the pit of the garage into a tiki hideaway. The semi-hidden space can only be accessed by entering Sip, walking towards a canoe suspended overhead and descending down a staircase in the middle of the lounge to the mysterious fathoms below. The bar within a bar is called UnderTow. Once inside, it feels like you’ve boarded a vessel at sea, with portholes on both sides, light beaming down over the bar from the deck above, as well as thunder and lightning effects that sweep through about every 10 minutes. On every corner of the bar is a post that has been carved by hand into a detailed tiki, each with its own personality. Cargo and wooden barrels are scattered throughout, including a barrel on the wall with an incredible etching of an octopus. Not surprisingly, the drink menu is full of tiki cocktails; however, not every cocktail employs rum as one might expect. Guests can peruse through pages of a hand drawn menu to discover tiki staples, variations on classic tiki drinks, as well as an array of creative cocktails with exotic elements. The bartenders who skillfully prepare the drinks take the craft seriously, as they will easily remake a cocktail from scratch if they sample the drink before serving and realize that it’s not on par with their standards. Highlights from the menu include the Dutchman’s Demise, made with vodka, white rum, cloosterbitters, coconut, strawberry, tropical juices and spices; The Smoking Cannon, a stirred drink made with bourbon, bitters, sherry, pineapple and topped with cinnamon smoke; and Smuggled Goods made with macadamia nut infused rum, mezcal, sherry, orgeat, lime and pimento. As for the food menu, acclaimed Chef Cullen Campbell of Crudo is developing a small bites menu that will roll out in the days ahead.
