By Amanda Goossen As founder and general manager of Sip Coffee & Beer Garage, Alex Cardineau is proud of the bustling atmosphere at Arcadia’s most recent hangout hotspot. Thankful for the tables literally overflowing with both casual coffee drinkers and hardcore aficionados, Cardineau isn’t surprised at the ever-growing population of coffee spots in the area. “I don’t see Dutch Bros or Starbucks as our competition,” Cardineau said. “There’s room for everyone in this business. For us, we just want to serve really high quality coffee, with efficiency and care, in a place where people want to hang out.” Sip Coffee & Beer Garage opened in 2015 and took over the building which once housed Avis Lubrication Shop on Indian School Road. Within a few months Sip turned the dingy garage where Arcadia residents once stopped for a quick oil change, into a hip and vibrant place to drink a beer or sample a craft coffee creation with friends, colleagues or while you work diligently in front of your laptop all afternoon. And with cold-brew coffee and pour- over brewing techniques becoming standard options for even the most inexperienced coffee drinkers, Sip has a slew of experts standing behind the counter ready to whip up the perfect libation, no matter what the occasion. Recently Arcadia News had the privilege to walk behind the bar for a lesson from Cardineau about brewing your morning coffee as well as pouring the perfect beer. And Parker Duty, general manager of Sip’s Old Town location, gave me a lesson in making cold-brew coffee. For this iced coffee addict, it was pure heaven. AG: What is the secret to making a great cup of coffee at home? Cardineau: The type of equipment you use to brew your coffee makes a huge impact. Each type of brewing equipment achieves a different outcome. Using an AeroPress pulls out the most flavor in the beans and gives you a cup of coffee closest to an espresso, without having to use an espresso machine. A Chemex, which is a pour-over type of tool, produces a very clean, well-balanced and crisp cup of coffee and is probably my favorite. A French press is a full immersion method and creates a grittier cup of coffee. It’s more traditional to what Americans are used to drinking. If you wanted to introduce someone to today’s coffee culture, this is probably the type of coffee you’d want to use to help transition their preference. AG: Why do you think cold-brew coffee has suddenly become such a trend? Cardineau: I think it’s a huge hit because coffee culture has grown so much. The craft scene as a whole – such as beer and cocktails – has changed everything. Plus, the caffeine level is so much higher in cold brew. AG: Why do you think the beer and coffee house type of a spot has become so popular? Cardineau: I hear from customers that we offer an environment to hang out, for any number of reasons. You can come for a business meeting or a place to see your friends. You can have a beer or a coffee. With a variety of options, we are more accessible. In the kitchen with Sip Coffee & Beer Garage Honey & Chocolate Infused Cold Brew • 1 cup of ground coffee • 1/2 cup chocolate pieces (such as chocolate chips) • 1/2 cup hot water • 1 cup of honey syrup • 1 gallon cold water Place coffee grounds in a cheesecloth bag inside a large empty water pitcher. Set chocolate pieces on top of coffee grounds. Holding the bag open, slowly pour about 1/2 cup hot water over the chocolate. The chocolate will melt into the grounds. Slowly pour honey syrup over the grounds. Tie bag tightly so coffee grounds cannot escape. Pour 1 gallon cold water over the bag of coffee. Let the tightly tied bag of coffee grounds seep inside the large pitcher over night (24 hours is appropriate). Remove bag from water, which is now cold brew. Enjoy coffee over a cup of ice. And the visuals are stunning, as a vapor of liquid nitrogen f lows over the sides of the mixing bowls, much like a chemistry lab you would see in the movies.
