Her daughters Briony and Ashlyn have helped in the kitchen since they were 6 years old and have shown a real interest in not only cooking, but also creating recipes. “The kitchen is a place where we work together as a family,” said Renee. “We’ve always allowed the girls to get involved.” The Blue Cross Blue Shield of Arizona 2016 Walk On! Kids Cooking Challenge invited children ages 9-12 to submit ideas for healthy side dish recipes. The recipes had to be original, include at least one fruit or vegetable and take no longer than 20 minutes to prepare. Renee clipped the article from the newspaper and left it out to show her daughters. That evening the family went out to dinner and the girls brought along notebooks to start developing recipes. “I thought it would be fun to enter, to test my limits,” said Briony. Briony sent in her recipe, which was developed from some of her favorite fresh ingredients, such as mangos and strawberries. Recipe submissions from across the state underwent a three-part scoring process. First, a nutrition specialist reviewed all the recipe submissions and chose the top five finalists based on each recipe’s level of nutrition. Then the top five finalists participated in a public event at the Talking Stick Resort Arena prior to a Phoenix Suns home game where game attendees had a chance to taste and vote for their favorite recipe. For the third part of the scoring Arcadia kid wins big at Arizona Cooking Challenge Rainbow Mango Salad Taco Serves: 1 • 1 mango, peeled and diced • 1 large shallot, diced • 1⁄2 cup purple cabbage, diced • 8 strawberries, chopped • 1⁄4 teaspoon cumin • 1⁄4 teaspoon chili powder • 1⁄4 teaspoon oregano • salt and black pepper, to taste • 3 limes, squeezed for juice • 3 medium romaine lettuce leaves • 1 sliced avocado • sprinkling of jarred medium spiced jalapeño (optional) In a bowl, mix the first eight ingredients together to make a salsa mixture. Lay out the lettuce leaves and top with the salsa, sliced avocado and jalapeño. Enjoy! *Add one chicken breast sautéed in 1 tablespoon of grape seed or olive oil and lightly seasoned with chili powder, cumin and oregano to make it a main meal! process, videos of contestants discussing what makes their recipe delicious were posted online for a public vote. The recipe that received the most points from all three scoring categories was declared the winner. In March, Briony’s recipe for the Rainbow Mango Salad Taco was announced as the first place winner. Briony is a student at Christ Lutheran School and enjoys playing volleyball and basketball. Cooking has been a longtime passion for this young Arcadian and she definitely sees additional cooking contests in her future. “Next, I’d like to compete in Chopped Junior ,” said Briony, with a proud smile.
