Photography by Harley Bonham slow cooker mashed potatoes By Getcrocked.com ingredients • 5 lbs. red potatoes, cut into chunks • 1 tablespoon minced garlic • 3 cubes chicken bouillon • 8 ounces sour cream preparation • In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water. • In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency. • Transfer the potato mixture to the slow cooker. • Cover. Cook on Low for 2 to 3 hours. • Just before serving, stir in butter and season with salt and pepper to taste. Page 35 November 2014 Grilled cheese and craft-beer concept officiates opening By Amanda Savage Union Barrelhouse hosted a delayed grand opening on Thursday, October 9, after opening over the summer. The event welcomed the community with live music and free food samples. The new restaurant brings another craft- beer concept restaurant and bar to Old Town Scottsdale. Next to German restaurant and bar Brat Haus, and not far from the newer Sip Coffee and Beer House, there is no shortage of beer selection in the area. This craft-beer bar is similar to others like Handlebar in Tempe that have popped up over the years, concentrated on an “authentic” thought-through plan which includes a New American look with wooden floors, metal, concrete and rusted accents, with slick bars and tables. The aesthetic is fresh and alluring, the restaurant’s standout quality being its roomy patio. The beer taps, like Angel Trumpets and Ale House in downtown Phoenix, are numbered, instead of represented by a tap and balsamic drizzle and the Classic, made of aged cheddar, Swiss and a crisp Parmesan crust. Although adding chicken and beefsteak to a caprese is somewhat confusing, the flavors of both sandwiches blended well together. Servers brought around samples of the Liberty Fondue, which was three cheeses melted together with a balsamic drizzle, served with soft pretzel sticks. The last sample I tried was the creamy Mac and Cheese, which is made of a three-cheese sauce poured over corkscrew pasta. But unlike Angel Trumpets, who dedicates an entire wall for their beer list directly behind the bar (so it’s easy to see from wherever you stand), Union Barrelhouse’s chalkboard is located on one side of the bar, and somewhat behind it. The restaurant’s menu looks to create a niche with its Modern Melts, which are gourmet grilled cheese sandwiches. There are seven sandwiches total. The grand opening event offered samples of the Caprese, made of mozzarella, tomato, basil, chicken breast, beef steak like Destihl Juicy Juicy Mango IPA and Tieton Cherry Cider.
