Clayton (10), Kyle (7) and Scout (4) juggle school and activities, while parents Mike and Heather coordinate busy work schedules. In the past year, Heather’s photography business has taken off, adding an exciting yet challenging element to their calendar. “We rarely eat out,” said Heather. “Friday nights at Tee Pee are a tradition. Other than that, most nights we’re home, eating a home cooked meal.” To achieve such a feat, Heather admits it takes a lot of planning and organization. Every Sunday, Heather takes the family’s upcoming weekly schedule into account. “If I know I have a photo shoot one evening, I plan a Crockpot meal or something simple my husband and kids can put together,” Heather said. She then pulls out her list of meals. Organized by type of meal (meat, chicken, pasta, etc.), side dish or vegetable, Heather determines the menu for the week. “I shop Sunday afternoon or Monday morning for the entire week,” said Heather. “I rarely go back throughout the week for anything more than maybe extra fruit.” Trying to get her kids familiar with eating salad, Heather prepares the side dish three to four nights a week to go with their dinner. “Sometimes friends will ask how I get my kids to eat salad,” said Heather. “The thing is, they each have their favorite part. One likes just the avocado, one eats all the veggies while the other eats the lettuce.” Spicy sausage and spinach orecchiette is a staple in the Kinkel home. “It’s simple, has a little spice and the kids eat it up,” said Heather. Served with watermelon and grilled corn, this summer meal is easy to get on the table and beloved by the whole family. Mother of three, Heather Kinkel, prepares an easy weeknight meal. Put all of that spinach in a large bowl 2. Boil water and cook pasta according to package directions 3. Remove sausage from casing and brown until cooked through 4. Deglaze the pan white wine 5. Allow the wine to cook down, about two minutes 6. Add cream and parmesan 7. When pasta is cooked, drain and put in bowl, right on top of the spinach 8. Allow spinach to wilt a bit, add sausage sauce 9. Stir it up and enjoy!
