Their ties to Arizona run deep; their connection to the land is important. Pacheco’s family goes back nine generations in Arizona. His family’s farm in Marana was home not only to the Pachecos, but to the food that fed them. Pacheco’s own childhood instilled in him the farm-to-table movement that now inspires kitchens throughout the world, especially Lon’s. Lon’s at the Hermosa Inn was named for its original owner, artist and cowboy Lon Megargee. The Philadelphia native came West in 1896 looking for the American dream. Earning his way as a cowboy, bronco buster and homebuilder, Megargee’s art was his true passion and would become one of the reasons he built his beautiful adobe home and art studio in Paradise Valley. On a 6-acre piece of land, Megargee began building in the late 1920s. Never using blueprints, he built his structure using the techniques he’d witnessed in Spain and Mexico using old wood beams and adobe blocks mixed and formed on site with the desert soil. If Megargee decided he wanted another room, it was built. The home quickly became larger than expected. Soon it was a guest residence with friends coming to stay for weeks at a time. Late night gambling, an abundance of alcohol and underground tunnels were all rumored to be present in Megargee’s home, which would lovingly be called Casa Hermosa. Undergoing a $2 million renovation in 2009, luxury was a key factor in the construction. Beautiful, elegant and layered in history, the property is rich with elements of its past. Using architecture, adobe, wood beams and tile to develop a sophisticated yet casual look at the Southwest, The Hermosa Inn is a perfect balance of its past, present and future. Lon’s at the Hermosa and Last Drop Bar were brought to the hotel in 1994, created to bring outstanding food and drink, as well as a vibe that coincided with the time of Megargee and his guest residence Casa Hermosa. Using the mysterious underground tunnels of the past as the current wine cellar, the property salutes its namesake in ways he would appreciate. The restaurant and bar have proven their greatness by becoming favorites to both locals and visitors from around the world. Chef Pacheco works diligently in his kitchen to design “artful American” cuisine inspired by comfort food, using local and seasonal produce often coming from the herbs, citrus and vegetables from the restaurant’s own 1/2-acre garden just outside the kitchen doors. A new weekly Chef’s Tasting Menu is offered to showcase both the culinary skills of the masterful kitchen team as well as seasonal products from local ranchers and farmers. “The tasting menu is our chance to do something different that is not on our regular menu; our chance to have fun with different items and a chance for our cooks to explore different ingredients and get creative,” Pacheco said. The tasting menu consists of fi ve courses with the possibility of wine pairings. Elements are beautifully matched and the fl avors exquisite. My own experience included cellar- cured barley prosciutto with local dates and arugula; smoked Mt. Lassen trout with sun fl ower sprouts, shaved radish and kimchee vinaigrette; a deconstructed “paella” with saffron arancini, shrimp, mussels, halibut and arabiatta sauce; Australian “wagyu” strip loin with truf fl e parsnip, grilled bok choy, tempura maitake, and white soy demi; and warm blackberry sundae with chocolate souf fl é cake and chocolate cookies. Each course was more extraordinary than the previous one. My husband and I spent hours afterward discussing our favorites, debating on a plate or a simple portion of the recipe more outstanding than the other. Never could we settle on one aspect. Each bite, vegetable, sauce and bit of protein stood out and made an impression that will last a lifetime. WATER WATER!
