Chef Beau MacMil- lan spends his life preparing stunning plates of mouth- watering food for guests at elements restaurant at The Sanctuary Resort at Camelback Moun- tain. Using local, organic produce, sustainable seafood and hormone-free meats, Chef Beau offers upscale award-winning American cuisine with Asian accents. Although his days and nights are spent creating innovative meals at elements, Chef Beau is also known for his frequent appear- ances on the Food Network. A regular star of the network, he’s won Iron Chef America, as well as appeared on Chopped, Worst Cooks in America and The Best Thing I Ever Ate. Most recently, Chef Beau has co-authored his fi rst cookbook, The Alzheimer’s Preven- tion Cookbook with Dr. Marwan Sabbagh, a geriatric neurologist, dementia specialist and the director of the Banner-Sun Health Research Institute, one of the world’s most prominent Alzheimer’s disease research insti- tutions. I recently sat down with Chef Beau to dis- cuss his work with Dr. Marwan Sabbagh and the Alzheimer’s Prevention Cookbook. Arcadia News (AN) : Chef, what brought you to this project? Chef Beau (CB) : Local television host Pat McMahon brought his friend, Dr. Marwan Sabbagh, to dinner at elements. He spoke to me about his third book and how this time he wanted to add the food and recipe aspect to the book. He really wanted to step outside the box with the recipes and I was excited to be a part of it. The doctor provided ingredients and infor- mation about antioxidants, fats, etc. to give me a starting point. My goal was to then cre- ate sleek, stylish and approachable recipes. AN : Did you take anything from elements for the cookbook? CB : Diet and nutrition give the body what it needs to thrive. I took what I see from the restaurant, such as the fact that many people tend to eat healthier at breakfast and lunch, and based recipes on this knowledge. You will see juices, smoothies, yogurt and egg dishes in the book. The Banana, Granola and Yogurt Parfait will soon be on the menu at Sanctuary as well as the Breakfast Fried Rice with Scrambled Eggs because I think they will work perfectly with what we do at the restaurant. AN : Can you share with our readers, one key ingredient to add to their diet in 2013 to help with brain health? CB : Turmeric. There are so many great as- pects of this spice. In- dia takes in the largest amount of turmeric in the world and has the lowest percentage of Alzheimer’s. Spices have an unbelievable amount of antioxidant, something incredibly important to our bod- ies. Cloves, cinnamon, thyme, oregano and rosemary are all excellent additions to our diet. For home cooks, spices are intimidating but they don’t need to be. Just play with them. They add a whole new dimension to your cooking. AN : What should we all change about our diet in 2013? CB : Everyone should be getting good calories in the morning. Protein driven plates, good eggs, light swiss cheese, vegetables. Find a good juicer and juice. Stick to what you like when juicing and slowly add different things. The pallet is a working muscle, help it devel- op. Carrots and ginger are excellent additions to a juice because they taste great and have immense heath benefits. AN : Can you share something you learned while creating this cookbook? CB : When I agreed to work on this book I told Dr. Sabbagh, “You want me to write a healthy cookbook and I’m a big guy? I have to makes changes.” I went on a healthy diet. From August to De- cember I lost 70 pounds. I learned that when I eat bad food, it feels good when I’m eating it but afterward I feel terrible. Now, I know there’s no better feeling than eating well. I feel great after I eat. AN : What are your favorite recipes from The Alzheimer’s Prevention Cookbook? CB : The Brain-Boosting Buckwheat Noodle Bowl, The Banana, Granola and Yogurt Par- fait, The Breakfast Fried Rice, Kale Blueberry and Pomegranate Salad and the Curried Qui- noa with Green Onions and Basil. I wanted to create recipes for people that would look and sound enticing, to give them the confi dence to actually execute them. 11
