Page 40 December 2012 1 cup semisweet chocolate chips 1/2 cup chopped nuts (optional) 1 teaspoon vanilla In a large saucepan combine marshmallow cream, sugar, milk, butter and salt. Bring to full boil over moderate heat, stirring constantly for 5 minutes. Remove from heat. Add all chocolate chips, stir until melted and well blended. Stir in nuts and vanilla. Pour into foiled 8 inch square pan. Chill until fi rm (about 2 hours). Slice into small pieces. A family favorite Anna Tigue submitted her recipe for Tiramisu which is a holiday favorite for many, although in her Italian family, it’s an everyday staple. Anna’s Tiramisu 8 Cups Espresso Kahlua 1 large package Italian lady fi ngers 2 (8oz) containers of heavy whipping cream 2 cups sugar 2 tablespoons vanilla powdered chocolate 1 container Mascarpone Make espresso and add one cup sugar. Set aside. Whip whipping cream with one cup sugar, vanilla and mascarpone, until stiff. Dip lady fi ngers in espresso and layer them on the bottom of a container of your choice. Drizzle with Kahlua. Pour half of whipped cream mixture over lady fi ngers, and then sprinkle with powdered chocolate (I do a lot of chocolate). Repeat layer. Alternative to pie Carrie Klain is sharing her recipe for Pumpkin Cheesecake, which was handed down to her from her mother-in-law, Carol. Carrie said this recipe is a family favorite and a terri fi c alternative to pie during the holidays. Pumpkin Cheesecake Crust: 1 1/2 cups Graham Cracker Crumbs 1/4 cup sugar 1/3 cup butter or margarine, melted Cheesecake: 3 (8oz) pkgs cream cheese, softened 1 cup sugar 1/4 cup packed brown sugar 1 3/4 cups solid packed pumpkin (15oz or 16oz can) 2 eggs 2/3 cup evaporated milk 2 Tablespoon cornstarch 1 1/4 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Topping: 2 cups sour cream (at room temperature) 1/4 cup sugar 1 teaspoon vanilla Crust: Combine cracker crumbs, sugar and butter in medium bowl. Press onto bottom and 1” up the side of a 9” spring form pan. Bake at 350 degrees for 6-8 minutes. Do not brown. Cool. Cheesecake: Cream cheese and sugars in large bowl until fl uffy. Beat in pumpkin, eggs and milk. Add cornstarch and spices. Beat well. Pour onto crust. Bake at 350 degrees for 55-60 minutes or until edge is set but center still moves slightly. Topping: Mix sour cream, sugar and vanilla in a small bowl. Spread over surface of warm cheesecake. Bake at 350 degrees for 8 minutes. Cool. Chill for several hours or overnight. Serves 16. Kisses for the holidays Peanut butter cookies with a Hershey Kiss in the center were a staple in my life as a child. I couldn’t wait to bake them with my own kids and they are now a holiday favorite in our house. My in-laws wait for them to arrive at their doorstep each year, telling me it’s not Christmas until they have my cookies. Add peanut butter, milk, vanilla and egg. Beat well. Lightly spoon fl our into measuring cup, level off. Add fl our, baking soda and salt to bowl. Mix well. Shape dough into 1-inch balls and place on cookie sheet. Bake for 12 minutes. Remove from oven and immediately press a Hershey kiss into each cookie. Makes 3 dozen. Chocolate Gingerbread Cookies Submitted by Katie Braun 7 ounces best-quality semisweet chocolate 1 1/2 cups all-purpose fl our 1 1/4 teaspoons ground ginger 1 teaspoon baking soda 1 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1 tablespoon cocoa powder 8 tablespoons (1 stick) unsalted butter, room temperature 1 tablespoon freshly grated ginger 1/2 cup dark-brown sugar, packed 1/4 cup granulated sugar, for rolling Recipes Continued from page 40 1/4 cup unsulfured molasses Line two baking sheets with parchment paper, and set aside. Chop chocolate into 1/4-inch chunks; set aside. In a medium bowl, sift together fl our, baking soda, ground ginger, cloves, nutmeg, and cocoa. In the bowl of an electric mixer fi tted with the paddle attachment, cream grated ginger and butter until light and fl uffy, about 4 minutes. Add brown sugar; beat until combined. Add molasses; beat until combined. Add the fl our mixture in batches until fully incorporated. Mix in chocolate, cover with plastic wrap; refrigerate until fi rm, 2 hours or more. Preheat oven to 325°. Place the sugar in a pie plate. Form the dough into uniform balls about 1 1/2 inch in diameter. Roll each ball of dough in granulated sugar. Bake until surface cracks slightly, 11 to 13 minutes. Let cool for 5 minutes, then transfer to a wire rack to cool completely. Makes about 3 dozen. These are signi fi cantly best served warm the day they are made. Dough keeps very well in refrigerator until ready to bake or frozen already formed in balls (with granulated sugar in a zip lock- thus eliminating this step!).
