Indian School Road, in the center of Arcadia, sits a gem worth discovering with a chef so spectacular the simplicity and uniqueness of his food are drawing rave reviews from around the Valley and throughout the country. Chef Cullen Campbell’s vision for the past four years has been to bring modern Italian plates to Phoenix residents. He chose to do so in different venues. The original Crudo was inside the Steven Paul Salon in Scottsdale. Pop-ups were developed inside shops, boutiques and restaurants over the past year as he kept a lookout for a permanent location for his dream, Crudo. Campbell has proven he likes to think outside the box. Now, in a space behind a popular Arcadia shopping center, Crudo is a restaurant and bar you have to be looking for to fi nd. And as you search, you feel as if you’re looking for a New Orleans Speakeasy, a place you don’t mind seeking out because the experience is that grand. High ceilings, French doors and an understated approach allow Crudo to feel comfortable yet chic. Upon entering, turn left and fi nd quite possibly the best bar in Phoenix. A large space, perfect for a date, group gathering or a quick drink after a hard day’s work, it’s a happening spot without trying too hard. The cherry on top is the man making the drinks, Sommelier, cocktail artist and part owner Micah Olson, who joined Campbell and general manager Maureen McGrath on this project. Olson, who took over and transformed the wine program at the Sanctuary more than four years ago, stands ready to thrill you with his ability, developing drinks only someone with much knowledge and a steady hand could produce. The Elijah Craig Bourbon cocktail, Anchor Steam beer and Laetitia Bubbles he served my party were superb. The Laetitia made even better by the way it was presented, in a tall, fun glass unlike your average champagne fl ute. Once seated in the restaurant, guests are given a menu that appears to be complicated but turns out to be an original and user-friendly concept. The menu is broken into sections. Guests are encouraged to choose one item from each section, creating their own three-, four-, or fi ve-course meal. Sections range from, Crudo/Raw, Mozza/Mozzarella, Cotto/Cooked, Griglia/Grilled and Dessert. While each item can be ordered individually, ordering a tasting menu makes more sense in price and enjoyment. Three-courses is $35, four-courses is $45 and a fi ve-course meal is $55. The Crudo (which means “raw” in Italian) section has a variety of raw seafood options, my favorite being the albacore. Served with apples, truf fl e and black garlic, this plate is an Italian version of a Japanese favorite, and Campbell’s way just might be better than anything I’ve ever had at a sushi bar. The Mozza choices range from Burrata (with pancetta vinaigrette, arugula), grilled (romesco, spring garlic), ricotta (dried tomato, olive oil and basil) and fresh (caramelized onions, bacon relish).
