As owners of WM Sacks Sandwicherie, a well-known Phoenix staple, lunch has always been their bread and butter. In April 2011 however, after 23 years of success, the brothers decided to expand. With their core ideas the same, “to serve meals that nourish individuals and families by preparing everything fresh each day,” they turned to an entirely new realm of style and fl avor. The Morrow family expanded their dynasty with Cave & Ives Portico Grill, 4247 E. Indian School Road. The Morrow family has decades of restaurant knowledge, beginning in Kansas with American cuisine and a piano bar, which became a family affair. When they moved West to Phoenix, Wanda Morrow, mother of Ivan and Cary, opened Sacks to bring area residents the same quality and love she gave to her own husband and sons each day in a sandwich. Sacks would build their business on affordable, healthy and wholesome meals, free of preservatives and additives. “When we moved the Arcadia Sacks to this new building, we knew we wanted to grow,” Ivan said. “This building gave us the opportunity to do dinner upstairs, with a whole new concept.” The new location, just down Indian School from the original, placed Sacks in an architecturally unique, two-story building with a hidden gem. The second story is home to a balcony with a million- dollar view of Camelback Mountain. The view, with a wrap-around bar allowing for inside and outside seating, gave the Morrow family a spectacular start to their Cave & Ives vision. “We wanted an elegant setting, but casual atmosphere.” Ivan said. “We wanted a location where families could come with their kids, but a couple could also celebrate their anniversary.” The menu would come next, which Ivan designed around a Mediterranean feel, giving Cave & Ives fl exibility and room for growth. Having traveled the region extensively, Ivan said he enjoys combining fl avors from numerous countries, South African and Italian being two of his favorites. “We aren’t traditional,” he said. “We take our ingredients from every region. We fuse things. We want a combination of fl avors.” Pizza tends to be the stand out, with choices ranging from a simple Margarita or a Sicilian, which brings together Sicilian sausage, pepperoni, capocollo, kalamata olive, onion, roasted red bell pepper, tomato sauce, mozzarella and fresh basil to such offerings as the Provence Chicken with lemon rosemary roasted chicken, artichoke hearts, roasted potatoes, red onion, roasted tomato, fresh mozzarella and pesto sauce. The Tuscan with smoked prosciutto ham, crumbled Gorgonzola cheese, fresh apple slices, fi g balsamico marmalade, arugula and fresh mozzarella is a pie made with fi gs reduced and turned into their own balsamico. Although the fl avors are far from typical, it tends to be a favorite for guests. The Artisan Cheese Platter and White Braise de Clams are basic appetizers, yet at Cave & Ives, they are brought to a higher level, with supreme ingredients and a superb balance of fl avor.
