Page 40 May 2012 Cookbook Continued from page 38 Chunky Apple Cake With Brown Sugar Sauce Cake ½ cup butter softened 2 cups sugar ½ tsp. vanilla 2 eggs 2 cups fl our 1 ½ tsp. cinnamon 1 tsp. nutmeg ½ tsp. salt ½ tsp. baking soda 6 cups chopped, peeled, tart apples Sauce 1 cup brown sugar ½ cup butter cubed 1 cup heavy whipping cream In a large mixing bowl, cream butter, sugar and vanilla. Add eggs one at a time. Combine fl our, cinnamon, nutmeg, and baking soda. Gradually add to creamed mixture and mix well (batter will be very stiff). Stir in apples until well combined. Let sit for about 5 minutes. Spread in greased 9x13 pan. Bake at 350 degrees for 40-45 minutes or until top is slightly brown and springs back when lightly touched. Cool 30 minutes. Slice into squares. Meanwhile make sauce. In small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream, bring to a slow boil over medium heat, stirring constantly. Remove from heat and drizzle over slices of cake. lives a couple blocks from her mother, have a very special bond. Self- proclaimed foodies, they love to try local restaurants, but said their favorite times are in each other’s home, preparing and eating their favorite recipes. “When I was raising Kelly,” Pam said, “no matter how busy we were, we were always together for dinner.” “Meals were important,” Kelly said. “It was our time. Food always brought us together.” Dinner in the Rupp home was always healthy and homemade, even if time was scarce for the busy mom. On Sundays, Pam would do the shopping and cook all day. She roasted an entire chicken every week to make chicken salad for Kelly’s lunches, still one of her daughter’s favorites. A week’s worth of lunches and dinners would be ready, allowing mom to sleep a little more sound. When Kelly was attending Northern Arizona University, Pam’s need to feed her didn’t end. A doctor in her of fi ce had a second home in Flagstaff and his trips up north gave Pam an excuse to send an ice chest fi lled with such dishes as Fettuccini Alfredo and meatloaf to her daughter. It was amazing, Kelly said. Special dinners haven’t come to an end now that Kelly is married. If Pam has a new recipe she wants to try, or simply wants to treat her daughter and son-in-law, she has created an ongoing tradition of dropping off a special basket with a meal inside. “I love to cook,” Pam said. “To me it isn’t hard, it’s fun. Page 41 May 2012 Warm weather means time to be aware of bee activity By Heather Gross As the weather heats up bees will become an increasing problem for people in the Valley. “The fl owers are starting to open up so the bees are out and about right now,” said Brian Downs, a fi eld manager/inspector at Phoenix Pest and Termite Control. Because spring is in full bloom, bees are out looking for pollen to form their hives. “It’s going to be really bad for the next month or two, and then it will kind of taper down,” Downs said. Downs said there isn’t a way to prevent bees from swarming, but measures can be taken to avoid hives popping up in neighborhood yards. “Nine times out of 10 they’re just fl ying in and hovering around and they leave in a day or two,” Downs said. The best thing to do to prevent a hive from forming is to keep an eye on the bees.
