The plate is glazed with meat drippings and so hot it gives off palpable heat waves. As the waiter carves the bone and plates it out, he calls out the cuts: fi llet, New York strip. The lamb T-bone is thick and fl avorful, and the hefty veal chop, charred on the outside, is most appealing. Each cut of beef comes naked, served on a plain white plate, the better to appreciate its handsome form. Sides are classic and brilliant: Grilled asparagus with lemon zest and olive oil, Brussels sprouts with aged balsamic vinegar and pecans, black truf fl e cheese fritters, or a personal favorite, potato gratin with Comte. “We didn’t want to do the classic steakhouse and that is why we really focused on the fi nest, freshest and rarest cuts of meats such as bone-in buffalo steak, veal and rib-eyes,” Qualin said. These are sweet, spiced buns made with currants or raisins and marked with a cross on top. They are traditionally eaten on Good Friday, and Karl’s are fl uffy, sweet and the best I’ve ever had. He’s baking them up every Friday until Easter. Bran muf fi ns, often savored most by the health conscious, are for everyone. These muf fi ns, especially the minis, are crisp on the outside, yet moist and full of fl avor on the inside. They are made without processed fl our, giving them an extra advantage. The mini and regular size muf fi ns also come in chocolate, blueberry and banana nut. Danishes and strudel are a good choice to serve brunch guests. Cream cheese, various berry, lemon, apricot and apple Danishes share the bakery shelves with apple and cherry strudel. Both are sweet, buttery and delicious.
