Every student now has gardening class, where they learn to plant, compost, harvest and care for their gardening space. Recently when a family of gophers became a problem, the students worked with Halden to fi nd a solution. Then when a eucalyptus tree began stealing water from some of the gardens, the classes worked together to fi nd a way around it. Once the students harvest their class garden, Barbara meets with them in a classroom where they are taught to make a simple salad dressing to enjoy their bounty. The children take home the dressing and its recipe, as well as a variety of herbs, vegetables and fl owers. Summer crops recently were planted. Potatoes, beans, and sun fl owers will be aplenty before the end of the school year, allowing each of the students to reap the reward of their hard work. “In Arizona, the school year is the perfect time for planting and harvesting,” Halden said. At her urging, the school provided a salad bar with “colonial” vegetables. Halden said the staff was shocked by the amount of raw carrots, celery, radishes and other vegetables the students tried and enjoyed. Halden, who said “someone has to do the nitty-gritty hard work,” always is on the lookout for resources to build and maintain the gardening program. There isn’t money for the gardens – although the school recently received a donation from an anonymous donor – so Halden writes to seed companies for seeds the companies cannot sell because of damage to the packaging or expired sell dates. When the garden grew lots of basil, one school family made pesto and gave it away for donations to the school. Hopi takes part in the Seed Savers Exchange, and has distributed seeds to multiple schools in the area. Halden said her overall objective is to teach young minds about the bene fi ts of gardening and nutrition.
