Page 36 January 2012 Resolution for this editor is to cook more, or some By Christia Gibbons Jan. 1, I resolve to cook more. Scratch that. I resolve to start cooking. Scratch that. I resolve to stop using my oven for storage and actually get it fi xed. (I am not kidding). More than 25 years ago when I told my new husband I would cook if he would clean, he said: “I’m not cleaning.” Figure out what I said . . . All these years later I’ve been thinking that I should dust off (unpack in some cases) all that fab cookware we got as wedding presents and do the healthy and economical thing – cook at home. It’s time to give the microwave a well deserved rest. It’s not that I haven’t cooked for decades. We’ve entertained a bit, we’ve pot lucked once or twice. What I have made sure to do, though, is collect a few simple recipes that taste really good. Who knows why, but even a non-cook likes compliments. So thanks to my mom – who is the best cook ever (I take after my dad) but liked an easier dish to make every now and then – for fi nding these three recipes through friends and magazines, trying them out, winning rave reviews and passing them on to her cooking-delinquent daughter. Bourbon Franks 1, 14-oz. bottle of ketchup 1 cup bourbon 1 cup dark brown sugar 4 pkgs. miniature cocktail franks (or cut- up pieces of kielbasa) Mix and bring to boil, then simmer two hours in covered pan. Stir in franks to warm up a bit before serving. Don’t forget to have toothpicks handy. Cranberry Chicken 1 chicken 1 can whole berry cranberry sauce 1 jar creamy French dressing 1 envelope French onion soup. Mix and pour over chicken and refrigerate overnight. Cook at 350 degrees for 1 hour. Champagne Punch 1, 6-oz. can of lemonade 1 cup apricot brandy ½ cup triple sec 1 qt. soda water 1 bottle cheap champagne If your punch bowl isn’t big enough to hold a double recipe, use ½ can large lemonade. Also, mold an ice block/ ring instead of using cubes to lessen dilution. Our Lady of Perpetual Help Catholic School will have an open house at 10:30 a.m. Jan. 29.
