Page 36 November 2011 Sweets Continued from page 34 “It’s really adorable.” One of her neighbor’s favorite treats: Albert’s Dark Chocolate-Dipped Dates and Date-Nut Truf fl es. “Dates are nature’s candy,” she said. “It’s fun to show people how many sweet things you can make without using processed or preserved ingredients.” Albert said she experimented with the natural sweetness of dates, chopped and rolled the bars into smaller pieces and added her personal tips, tricks and techniques to the recipe. “I wanted to make them look like the little See’s Candies I ate as a kid,” she said. “My philosophy is to use food that is as close to how God and Mother Nature made it. “That’s what I did with this recipe.” Dates Continued from page 32 Torched Goddess is one of the many food trucks hoping to take the Phoenix area by storm, as they have in other cities across America. Crème brulee to-go seems like a massive feat, but Eric Ireland, a Le Cordon Bleu trained chef with years of culinary experience under his belt, has the system down. Hitting multiple spots a day, Torched Goddess staff can be seen in their van or in their truck serving up the best custard you’ve ever had the pleasure of devouring, using Ireland’s arsenal of organic, locally grown produce, and farm fresh, free-range eggs. Crème brulee by de fi nition is a spectacular French dessert consisting of a rich custard base topped with a contrasting layer of hard caramel. As many people know, the layer of hard caramel is reached by using a hand-held torch which fi res upon the top of the dessert creating a beautiful golden color and a crisp top covering luscious, creamy custard, which is most often a vanilla fl avor. The brilliance of Ireland and his Torched Goddess goodness is the multiple fl avors, especially the salted caramel. One bite of the salty caramel combination and your taste buds will experience fl avor combustion like never before. The richness of the custard unravels in layers, the salt peaking through ever so slightly as you are presented with a caramel fl avor that is absolute heaven. Ireland understands caramel, developing a buttery fl avor perfectly blended with its sugary roots. The golden sugar, torched to perfection on top, breaks open with the fl ick of a spoon, cracking the stunning shell and adding a texture that is a spectacular addition to an already perfect bowl. Next time you fi nd yourself in a Phoenix farmer’s market, look around for Torched Goddess. Keep your eyes open for a totally understated table or truck, dishing up the single best crème brulee and absolute best salted caramel fl avored anything I have ever had the pleasure of indulging in again. And, again. Amanda Goossen is the stay-at-home mom of a 3- and 5-year-old, and created www.litfestmagazine.com. She’s searching the Valley for the best sweets to share with Arcadia News readers. Page 37 November 2011 Keeping an Arcadia feel By Mamie Limerick Since 1919, developers masterminded a plan for the Arcadia neighborhood to create an oasis of sprawling residential lots and citrus groves complete with their own irrigation systems, as recorded in the City of Phoenix Arcadia Camelback General Plan. For Scottsdale-based interior designer Berkley Vallone, Arcadia is her favorite place to work. “I de fi nitely have an attachment to the neighborhood,” she said. “You see huge green lawns, kids on bikes and at the bus stop.” She said she loves the diversity of styles in architecture. “You don’t just see one style,” Vallone said.
