Page 38 October 2011 PERFECT PEACH PIE 2 pie crusts (Whole Foods frozen pie crust recommended) 1/3 cup white sugar 1/3 cup packed brown sugar 4 tbsp. tapioca starch 1/8 tsp. ground cinnamon 6 cups peeled and sliced peaches (approximately 8-10 medium peaches) ½ tsp. fresh lemon juice 1 tbsp. butter, cut into smaller pieces Extra ½ tsp. white sugar Heat oven to 425 degrees. Mix white sugar, brown sugar, tapioca and cinnamon in a large bowl. Add peaches to the bowl and stir until the peaches are covered in the mixture. Add lemon juice and lightly toss. After the piecrust has thawed, take one out of its pan and fl atten out. Keep the other piecrust inside its pie pan, fi ll with peach mixture. Take the pieces of butter and sprinkle over mixture. Pick up the extra, fl attened piecrust and lay it on top of the pie fi lling. Pinch the edges together all around which may take a bit of extra effort and attention. Cut approximately six slits in the top of the crust, brush with a bit of water and sprinkle with ½ tsp. of white sugar. Using three, 3-inch pieces of tin foil, cover the crust of the pie. Bake with these pieces on the crust to keep crust from burning. Place pie in oven on the middle rack. It’s a good idea to put a cookie sheet on the bottom rack to catch any juices that may over fl ow. Bake for 30 minutes and then remove foils from crust. Bake another 10 minutes. Turn the pie 180 degrees to help the pie cook evenly. Bake another 10 minutes. If the entire pie is golden brown, remove from oven. If not, cook until the desired golden hue (even a dark golden hue in some areas) has been reached. Place pie on a cooking rack and let cool for at least two hours. Serve with homemade whipped cream or vanilla ice cream. Venetian Spritz goes best with late afternoon sunlight By Gabe Bertaccini Excerpt from Gabe Bertacinni’s blog Convivium when he recently traveled to Italy: There is also a deeper and more honest reason why I like to go to Venice, that being the ability of making the best Spritzs I have ever tasted. Their “National Drink,” as I like to call it, is a must for residents and tourists alike for which it takes on a very interesting meaning. In fact the Venetian Spritz is not, shall we say, an “important” thing. Drink. Whatever. It’s red, for crying out loud, and composed of any unassuming white wine, sparkling water, and your choice of mixer: Aperol, Select, or bitter (Campari, SanBitter or even the herby Cynar). Although the fi rst Spritzes fi ltered down from Austria and were made with white wine and seltzer only, the newer, fl ashier red version is a Campari creation that has become a Venetian (and Veneto) habit: It is not just a drink, but a way of life. A way of life that I have been always embracing, even if not from Venice. That appealing shade of fl orescent orangish-red, however, makes the Spritz extraordinarily entertaining; when you witness late afternoon Venetian sunlight angling through the glass, fi ring it the color of icy embers, ti viene la voglia – it just makes you want one. It would seem obvious, then, that you should order at least one Spritz during your stay, if for no other reason than to stare in compagnia, to hang out and blend in.
