Already open, another restaurant from the Valley’s own Sam Fox at the CityScape space downtown is The Arrogant Butcher. Like Sauce, Olive & Ivy, as well as Zin Burger and True Food Kitchen, this new concept is promising with its meat-centric menu and sleek, comfortable interiors. It’s about comfortable food, tasty and somewhat expensive, messy to eat, not meant to be anything more. The place has a friendly, congenial atmosphere, so much so that guests feel like they’ve been invited to a private club where everybody is eager to eat. And they’re happy to nab even a stool at the bar or a seat at the L-shaped climate-controlled patio, lined with planter boxes, a striped mustard yellow and white awning and funky painted picnic table style seating for 66. Never will you fi nd a more perfect platform for people watching. This 7,500-square-foot restaurant makes everyone feel at home: executive types, downtown hipster types, and everyone in between. It is fun sitting at the bar watching the sassy bartender mix up a Negroni Sour or the After School Special with quick, ef fi cient movements. The dozen wines by the glass or bottle right now include a delicate Chardonnay Chablis from France and a Howell Cabernet Sauvignon, both of which I’d recommend. I appreciate the Arrogant Butcher’s shabby chic aesthetic. Industrial décor is complemented by a selection of woven fabrics and worn leathers in natural tones including taupe, chocolate brown, brick red, steel blue, and gray. It’s all set against textured woods, worn and polished steel fi nishes, exposed concrete and glass. The space feels as if it’s been a part of the downtown community for years - urban, raw, edgy, rough and unpolished, but also as warm and inviting as an old friend. End-grain wood fl ooring made from 100 percent solid Douglas fi r salvaged from the Paci fi c Northwest sets the scene. An open space with exposed concrete ceilings, eclectic industrial lighting, brick and MDF covered walls completes it all and ties it together. The menu is sleek and it all sounds basic and appealing. You could start with the black mussel, spicy pork shoulder and Pomme Frites. Or, you could also start with oysters on the half shell, not inexpensive at $2.50 a piece, which didn’t seem to stop the couple seated next to me from indulging in a full dozen. Smoked salmon rillettes is a great dish to share. It’s a generous dollop of rich smoky puréed fi sh garnished with celery leaves and shaved radishes to spread on a stack of crusty grilled bread fanned out on the plate like playing cards. Entrees are classic. The scallops with bacon, Gordo beans and spinach are kind of addictive, and the rock shrimp, chicken and sausage Jambalaya perfectly done. The grilled sword fi sh with artichokes, creamy Barley, crushed chili and lemon is a very original take on this kind of seafood which is usually done Sicilian style and can be a little heavy. It’s got a real kick to it. At a far table, fi ve or six guys in plaid shirts and jeans swigged beer and dug into crab stuffed chicken, a hit on all levels: It’s hot, deliciously messy. The beef short rib stew could be seen being savored throughout the restaurant. It is an excellent earthy dish accompanied by a fried egg and fresh cornbread. And then there are the specials, different each day of the week. It could be fried chicken and honey biscuits or king crab cioppino, or a slow-roasted prime rib. With the Arrogant Butcher, Sam Fox isn’t overly ambitious with the menu, but still not everything works. The glorious taste of fresh bay scallops is sometimes overwhelmed by the bacon. Other ingredients, like crushed chili, are sometimes used over enthusiastically in a couple dishes. To polish off the meal there are homey desserts: a buttery, creamy blueberry cheesecake and a salted caramel pudding. I wouldn’t say no to the hot chocolate cake as well even if it is nothing original. The Arrogant Butcher is a warm, inviting restaurant (albeit incredibly loud once everybody gets talking) that is sure to be a neighborhood hit.
