Van Buren, Tolleson House Continued from page 37 By Christia Gibbons When chef Bobby Flay of Food Network’s “Throwdown” botched his jambalaya by lifting the lid too soon after the rice was added, it was just the challenge Jennifer and Jake Cranston needed. “We looked up his competitor’s jambalaya recipe on the Web and decided to see if we could do better than Bobby,” Jennifer said. With a few modi fi cations – stronger sausage, no red pepper fl akes – on a recipe by New Orleans chef Emile Stieffel, and a solid commitment to keeping the lid in place so the rice can reach perfection, the Arcadia couple offers its own version of jambalaya this month. (Recipe, page 41) With this dish, as with others, “We invite our friends over to try it and tell them if it’s horrible, we’ll order pizza,” Jennifer said. Jake said the recipe was perfect for helping him to season a new cast iron skillet. One secret to the recipe, he said, is to not fear using a metal, slated spoon to scrape all the ingredients from the sides and bottom of the pan in the stirring process. “It helps give it the fl avor and dirty look,” he said. The couple, married two years this past April, have a seemingly choreographed routine as they soundlessly hand off ingredients, chop, measure, clean as they go and stir as needed in their tiny kitchen with its 1950s pull-out range. “Small space is hard to manage,” Jake said. “It’s good that she’s small.” However, they weren’t so in sync when Jennifer bypassed Jake’s coffee cart in front of Hava Java at 32nd Street and Camelback Road in 2000 as she went inside to grab a coffee on her way to work as an attorney at Gallagher & Kennedy. The contemporary American bistro also turns out some excellent soups. I loved the subtlety of a roasted cauli fl ower soup coming from the McClendon Farms and adorned with fresh mint and toasted breadcrumbs. Chef Christoforo also turns out some excellent seasonal pasta. The last time I visited, I had the pleasure to enjoy a spinach ravioli stuffed with halibut and leeks, served in a fennel and lemon sauce and garnished with roasted almonds. Main courses are generally well- conceived, too. Who wouldn’t enjoy a lemon grilled chicken, smashed potatoes and fried rosemary? The skin is crisp, and a perfect fried egg sits on top. At $18, it’s a bargain. Braised veal shanks are beautifully tender, suffused with tomato sauce and mirepoix and ideal for a Pinot Noir or a Bourgueil. Also on the heavier side, a nicely grilled rack of lamb with roasted Chantrelle Mushrooms and Rainbow Chard. The restaurant doesn’t have a big wine list, but it’s full of interesting choices at good prices. For example, a sparkling Prosecco from Italy that goes for around $36 a bottle. There’s a Santa Barbara Pinot Grigio and a heavier Riesling from Germany. One of my favorite SuperTuscan, Tenuta Sette Ponte Oreno unfortunately is not offered by the glass. Dessert? There are just a few, but that’s all that’s needed. One is terri fi c, fi g-ricotta fritters with a silken texture and thin, crispy crust. It comes with fi g balsamic syrup, crème fraiche and Fleur de Sel caramel for dipping. The other choices are chocolate cloud cake, Pudding and Pie with marshmallows and pecan pie, plus original ice cream and cookies from Tracy Dempsey, who is the pastry chef. Point taken. Authentic and local ingredients combined with old-fashioned fl avors. Now when I fi nd myself in South Phoenix, I know where to go. Jake’s brother Justin Shafer owns the coffee spot. She ended up dating Jake’s friend and roommate, who was working inside, for several years. Jake bided his time in the wings as just- a-friend. By 2004, when Jennifer was on her own, several fortuitous things happened. Jake was planning a trip to Europe when a friend canceled on him, and he was looking around for someone else to go with him. Jennifer found herself with time on her hands after a trial was canceled. She called him and said she’d meet him in Europe. “The deal was that if we end up not being able to travel together, we’d go our separate ways,” Jennifer said. Both still marvel at the compatibility they discovered on that three-week European adventure – England, Scotland, Ireland, France, Monte Carlo, Italy, Germany and Amsterdam. Their yin and yang works around his being at Hava Java by 5 a.m. and home at noon and her working late and often on weekends. Jennifer and Jake Cranston Cookbook Continued from page 39 Jake starts making her favorite drink when he sees her car drive up, as he does for so many of his customers. “I’m good with people and cars, and when I see their car, I start making their drinks,” he said. Customers include such sports biggies as Arte Moreno, Ken Kendrick, Robert Sarver, Michael Bidwell, and Carl Eller. In fact, Jennifer pointed out, “He has quite a following. Some customers simply go without coffee on Jake’s days off.” For the record, his coffee drink is a triple ice mocha in a small cup, and hers is a small, double-iced latte with 2 percent milk or a medium, hot, non-fat latte with no foam. “For him, coffee is a luxury,” she said. “For me, it’s a necessity.” 6423 E.
