ASPARAGUS AND FENNEL SOUP* 2 tbsp. butter 2 tbsp. olive oil 1 bunch asparagus cut into two pieces 2 fennel bulbs, sliced 1 yellow onion, diced 4 cloves garlic 1 1/2 tsp. salt 1 1/2 tsp. ground pepper 1 1/2 qt. chicken stock 1/4 cup cream or milk (optional) Zest and juice of 1 lemon Good olive oil for fi nishing Salt and pepper to taste Serve hot or cold Heat olive oil and butter in a Dutch oven or small stock pot over medium heat. Add fennel, onions and asparagus and cook, stirring occasionally, until softened, about 10-15 minutes. Add garlic, salt and pepper stirring for 1 minute until garlic is fragrant. Add chicken stock, bring to a boil then turn heat to medium and simmer for 25-30 minutes. Remove from heat, if using milk or cream. To serve it hot, either heat the milk/cream before adding it, or, cool the soup slightly and add room-temperature milk/cream. If serving cold, add the milk/ cream once soup has cooled. Once milk has been incorporated, however, the soup can be reheated normally. To add the mild/cream, stir fi rst to incorporate ingredients then blend soup until smooth using an emersion blender, or transfer soup to a blender in small batches and blend. (When using blender, be careful to only fi ll half-way as soup will expand and splashes could burn). Ladle into bowls, garnish with lemon zest, lemon juice to taste and a drizzle of good olive oil. *Gluten free; easily made vegetarian or vegan. but I’m taking every precaution.” Donahoe’s asparagus and fennel soup, a recipe blended with fridge leftovers and a vegetarian conscience, is one of her gluten- free creations. “A lot of people are so afraid to go outside the boundaries of the recipe, but there’s a lot of fl exibility in cooking,” she said. “Gluten free doesn’t taste bad when it’s prepared properly. Her daughter, 19-year-old Nicole Corio, said she would also support her parents’ decision to use Protector to limit her calling and texting. “I am a huge culprit of talking and texting on the phone while I’m driving,” Corio said. “I would respect my parents’ decision to use it to restrict those (texting and talking on the phone), and I wouldn’t be tempted to do it since it wouldn’t let me do it anyways.” Tuttle said once the ignition is turned off, it takes about seven to 12 seconds for the cell phone to regain its normal state. “If someone wants to really use that phone, they have to go somewhere and turn the ignition off,” Tuttle said. Fallon said the software is available on all Android and Blackberry phones and soon will be available for the iPhone. Computer software is available for PC, Mac and Linux systems. The hardware is only available for modern vehicles that have an on board diagnostics port. Protector costs $249.95 and requires a service plan that can either be paid monthly or pre-paid for various months. Other than the city of Phoenix, there are no laws that restrict motorists from texting while driving in Arizona, Tuttle said. Protector Continued from page 39 Hillyard said after two years of taking sign language classes at ASU, he has realized how much hearing people take the ability of speech for granted. “These kids have the same goals and dreams as anyone. Many people just don’t take the time to listen to them, and that’s a shame,” Hillyard said. “The biggest thing I’ve taken away from this experience is to get to know something before you think you understand it.
