Sometimes, classic and historic pizzerias in Naples will go even further, only using San Marzano tomatoes grown on the slopes of Mount Vesuvius, using only the best fi or di latte, which is mozzarella made from cow’s milk as opposed to bufala, or water buffalo’s, and only drizzling the olive oil and adding tomato topping in a clockwise direction. Another addition to the rules is the use of fresh basil leaves on the pizza marinara – it’s not in the of fi cial recipe but it is added by most Neapolitan pizzerias for garnish. Regardless, Pomo is not joking around. The Margherita is a lovely-to-look-at pizza with molten cheese speckled with tomato and garnished with pretty basil leaves. The mozzarella gives up water in the cooking, so the bottom of the crust may be a bit limper than usual. I’m crazy about the patata, though, a pizza topped with mozzarella and Gruyère, smashed fi ngerling potatoes seasoned with rosemary, pancetta and chives. A study in pales, this pie is no beauty queen, but it is delicious. Another excellent choice is the Parma pizza topped with prosciutto crudo di Parma, fresh arugula and shaved Parmigiano Reggiano, also the Don Alfonso made with San Marzano tomatoes, spicy Italian salami, Italian sausage and roasted bell pepper. This combination creates a pizza that is balanced and restrained, with fi ne- textured sausage sliced and laid on top. At $11 to $16, the pizzas are large enough to share as a fi rst course, or if there are four of you, order two or three different pies and shuf fl e the slices. Pomo Pizzeria Napoletana is in the Borgata, a faux-Italian plaza built 30 years ago in the heart of Scottsdale. Italians working the kitchen and the pizza oven and the other chef producing the desserts, Pomo feels like a family affair. Stefano Fabbri opened the restaurant in February 2010 and placed an Acunto Forni brick oven as the prominent centerpiece of the newly remodeled space. This 6,000-pound beauty was hand-built in Naples. Pomo, though, is more than just a pizzeria. The restaurant offers a menu of appetizers, salads, pastas and main courses. Rustic Italian bruschetta with homemade bread, fresh farmers’ tomatoes, garlic, basil, oregano and a drizzle of extra virgin olive oil; a simply wonderful caprese salad with Fior di Latte Mozzarella and fresh Roma tomatoes; or an assorted cured prosciutto crudo and other meat boards to informally eat with a piece of bread and a good glass of wine. Salads are simple and pasta changes every day. There is only one option, however, if you end up liking the sauce you will fi nd the pasta cooked perfectly al dente. I ordered Bucatini All’Amatriciana, which came out judiciously sauced in a fragrant, loose tomato sauce with a hint of onions and the irresistible sweet pork taste of pancetta. For dessert, my pick is the emifreddo di Mandorle, a traditional Italian dessert term for Half Cold, a very light cold mousse topped with Amaretto cookies. The warm Italian Molten Chocolate cake with a scoop of gelato is also a big temptation. All in all, Pomo is a bright spot for a casual meal with authentic, artisanal Italian pizza. This earnest neighborhood Italian place has an authenticity of spirit that eludes some of the glitzier Italian restaurants in the Valley. Every neighborhood deserves a place like this. They have three bikes fully completed and a few bike fenders, including one bedazzled fender covered in sparkly, multi- color rhinestones. Kanter’s beach cruiser has an argyle pattern in pink, yellow and blue and the third bike is pastel yellow with navy blue and white polka dot fenders. After Lough graduated from the Walter Cronkite School of Journalism and Mass Communication in public relations, she and Little Monster, a Shiba Inu/ Lhasa Apso mix, moved to Denver for a change of scenery. Lough said she felt she shouldn’t be living in the same neighborhood where she grew up. But, winter in Denver changed her mind. “I didn’t know how to do anything in the snow, like drive, walk, or dress. I would wear two pairs of leggings over tights and had to ditch my heels,” Lough said. After six months, Lough was on her way back to Phoenix. “They weren’t really the beach-cruiser- riding-small-dog-in-basket kind of people, and those are my kind of people,” Lough said. Lough moved back to Arcadia and worked as a receptionist from October until this March when she was hired at HMA Public Relations. “When I moved back, I was over worrying that I was a ‘townie,’ and found so much opportunity and people with the same interests around me,” Lough said. Lough previously interned at Noodle, the East Valley Tribune and a current client of HMA, Save the Family Foundation of Arizona. “In the fi rst week of work, she already had speci fi c knowledge on how to talk to the media, write a story pitch and the story itself, then get it published.
