Princess, Scottsdale (Fairmont Princess) www.michaelmina.net Duck Fat Fries By Gabriele Bertaccini Hotel restaurants don’t have much of a local audience, with good reason: Not that many are truly compelling. But against all odds, during the last year it looks as if some excellent ones are popping up in the best Valley resorts including Bourbon Steak in the Fairmont Scottsdale Princess. OK, I need to admit that I’ve grown to accept the proliferation of upscale steak houses. This no-brainer restaurant concept of the last couple of years doesn’t need much depth of talent in the kitchen, and creativity usually lacks on every plate. At many of them I see plain steaks and very little originality on the menu. And, the check doesn’t come cheap. After visiting Michael Mina’s latest creation, though, I started to reconsider. The server eases the rectangular plate down on our table. “Here we go,” I think, biting into one of the three different types of duck fat fries. A hint of truf fl e; the wonderful round fl avor of the duck fat; the brightness of a perfectly made Aioli. Heaven. Between sips of the ginger-based cocktail, I watch the dining room with its dark, handsome look. There’s enough going on to fi t in the frame of a modern Brueghel painting. The food has a spark of creativity, the service is as crisp and professional as it gets, everybody is made to feel welcome and special, and the crowd is a dizzying mix of aging guests, business people, leggy blonds and some genuine high-wattage fi gures. Inside the mood is cool, casual elegance. Bourbon Steak feels like a posh restaurant from another era, but with a modern edge and a lively buzz. When you think you can’t eat another bite, the waiter brings out three beignets: Tongan vanilla crème brulee, Valrhona dark chocolate pot de crème, and a Macallan 18-year butterscotch pudding that contains enough scotch to send you off on a high. Born in Cairo, Egypt and raised in Ellensburg, Washington, chef Mina has had a love affair with the kitchen, creating memorable dining experiences for guests from a very early age. “I have been very fortunate to earn a living through my true passion,” Mina said. “Over a decade in the kitchen has taught me so much about myself, my style and how to share this excitement with guests. Each new project shows me that there is absolutely nothing I would rather do.” Sixteen concept restaurants later, Mina has received numerous accolades including a nomination as Chef of the Year 2005 by Bon Appétit, two-time James Beard award winner and the Michelin one-star award. But the real star of Bourbon Steak is 35-year-old executive chef Daniel Patino, who teamed up with Mina to bring the Valley this seasonally changing, contemporary steakhouse menu. Developing his passion for the restaurant industry while cooking at the historic U.S. Grant Hotel in San Diego during his enlistment with the U.S. Marine Corps, Patino of fi cially launched his culinary career at the California Culinary Academy in San Francisco. After working in Seattle and Southern California, Patino returned to the Bay Area and ended up heading the kitchen at Arcadia Modern American Steakhouse, a Michael Mina restaurant.
