Page 34 February 2011 By Christia Gibbons “Why wouldn’t you want to go sky diving?” Eighteen-year-old Jonathan Charlton pretty much sums up the spirit of his family, which includes parents Susan and Paul and 15-year-old brother Kipp, when he poses that question. And that’s just the beginning. From meeting in Spain during college semesters abroad – Susan from Simsbury, Conn., and Paul from Arcadia – the Charltons have lived a family life of travel and adventure. The sky diving was Jonathan’s 18 th birthday wish come true. Not to be outdone, Kipp and dad are going heli-skiing this month in Telluride. Back on solid ground, the boys and their father have been rock and mountain climbing for years. Paul grew up on Exeter and has been climbing Camelback Mountain since his family moved to the area in 1970 when he was 10. The Charltons and their three dogs Sam, Bob and Shiloh claim East Calle Rosa as their home base. Susan and Paul are both attorneys at Gallagher and Kennedy. Paul is a former U.S. District Attorney for Arizona and Susan a former counsel to the GOP majority in the state senate. Jonathan is a senior and Kipp a freshman at Brophy. Activities have included scuba diving in the Red Sea (the family), fl ea-market shopping in Paris (Susan) wrestling at Navy Seal camp in Annapolis (Kipp), skiing in holiday trips to Telluride (family), traveling to do good works in El Salvador (Jonathan), and napping on Mount Kilimanjaro. That latter needs a little explaining. The entire family climbed Mount Kilimanjaro in 2008. On the way up Kipp got sick, but insisted he wanted to go on, and could go on. At 19,200 ft. where the view and achievement were “euphoric” and the oxygen half of what’s available at sea level, Paul said, “I was doing a family head count and coming up one short.” He turned to fi nd Kipp asleep on the mountain. “He just laid down and took a nap on Kilimanjaro, but he made it.” A climb up Mount Rainier is planned for May. The family is just as happy at home, though. Susan said they love to have dinner parties. (Her fl ank steak is this month’s Arcadia Cookbook recipe). “We love to entertain,” Susan said. “Seems like everybody goes out to restaurants these days, but I love to have people over.” Every Sunday the Charlton family – and there are fi ve to 18 in any given setting, including Paul’s pediatrician father Kipp Charlton – gets together at someone’s house. Susan currently is on sabbatical to be home with her sons and start an online “thrifty purveyors of treasures” antique business with a friend. As for the next big adventure, Kipp pointed out: “Don’t I start driving lessons?” Family seeks fun, from sky diving to scuba diving Marinated Grilled Flank Steak Juice of 1 lemon 1/2 cup of soy sauce 1/4 cup or more dry red wine 3 tbsp vegetable oil 2 tbsp Worcestershire sauce 1 large clove garlic, sliced ground black pepper to taste chopped scallions 1 fl ank steak, about 1 1/2 lbs, trimmed Make marinade by mixing all ingredients together. Pour marinade into gallon size plastic bag. Add steak, seal, refrigerate and let marinate for between 2 and 12 hours, turning bag over now and then. Remove meat from marinade and grill for 4 minutes on each side for rare meat. Let meat sit for a few minutes, uncovered, once removed from grill. Slice on diagonal and serve For a party of eight, I usually make three steaks. Leftovers make a delicious lunch for the next day. One more time: Vatra changes gears in former garage By Dale Messmer The New Year meant a new restaurant at the beleaguered corner of 56th Street and Indian School. Vatra Grillhouse has abandoned ... well everything. New name (Kitchen 56). New menu. New management. New staff. New atmosphere. Even new parking (described as a “generous new self-parking area”). The former garage was opened as Vatra in August. Just four months later, Peter DeRuvo, former executive chef at AAA Four Diamond Award winner Sassi, was brought in. After a month, he left to become chef de cuisine at Prado at the InterContinental Montelucia resort, replacing Arcadia resident Claudio Urciuoli. Urciuoli has joined Chris Bianco at his downtown pizzeria and Central Ave. restaurant. Spirits of the island The New Year also brings a unique bar to the Valley’s most unique restaurant. Dwayne Allen and his partner, Arcadia High graduate Danielle Leoni, have added a rum bar to their Jamaican grill in downtown Phoenix. The plan is to offer 108 different rums from throughout the Caribbean. Just like their charming restaurant next door, Allen and Leoni have created an intimate environment with unique offerings. Allen did most of the build-out himself (as in the restaurant), including making the bar, stools and booths. The rum selections cross all price points. Included are some spectacular spirits meant for sipping, like a fi ne brandy. The Breadfruit is on Pierce between First and Second streets. Do you have exercise scheduled somewhere, somehow, every day this week? Or, three days per week? As you wake up in the morning and evaluate your current plan for the day ask yourself: Does this plan make me better or worse? Will I get stronger or weaker? Will I get thinner or fatter? If the status quo is no longer an option we are forced to consider our daily choices directionally, like an arrow. Are you moving toward your goal, or missing the target?
